Join our celebrity chef, Michael Mina, at ORLA, famed for its vibrant and authentic dishes that epitomize the spirit of Mediterranean cuisine. Here, you will create an unparalleled dining experience that fuses traditional flavors with contemporary culinary creativity. We are in search of a highly talented and inventive Executive Sous Chef to provide direction and leadership for the Assistant Chef and the Restaurant Kitchen team.

THE DAY-TO-DAY:

  • Operational Leadership: Lead daily kitchen operations, including fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and menu strategy execution for short-term profitability.

  • Policy and Standards Execution: Implement and oversee policies, training programs, and operating procedures, ensuring the highest standards of health, sanitation, and cleanliness in all kitchen areas.

  • Human Resources Management: Support the Executive Chef in managing HR duties, fostering a teamwork-oriented environment, providing performance feedback, ensuring quality hiring, and adhering to legal and company policies.

  • Product Knowledge: Maintain extensive knowledge of the venue’s food & beverage products, menu items, and equipment used in operations.

WHAT YOU MUST HAVE:

  • Bachelors degree or 4 years of equivalent work experience

  • 2 years of experience in a culinary management role, Executive Sous Chef or Sous Chef

WHAT WILL MAKE YOU STAND OUT:

  • Knowledge of all products, menu items and equipment used to perform these duties.

  • Ability to execute on guidelines for proper staffing to maximize efficiency and minimize labor costs.

  • Strong overall knowledge of menu preparation and presentation.

  • Excellent interpersonal skills to deal effectively with guests, management, employees.

  • Previous experience managing employees under a collective bargaining agreement.

  • Previous experience in a luxury or fine-dining restaurant in a resort setting.
