THE JOB:

Step into a leadership role in one of Mandalay Bay’s dynamic culinary operations—the Employee Dining Room. As an Assistant Chef, you will oversee high-volume food production, ensuring our team members enjoy consistent, high-quality meals in a buffet-style setting. This role blends hands-on leadership and operational oversight to create an efficient and well-organized kitchen environment. You’ll be responsible for maintaining exceptional food standards while managing a large team. If you enjoy the energy of high-volume kitchens, this is the role for you.

THE DAY-TO-DAY:

• Manage kitchen operations, ensuring food service runs smoothly and efficiently.
• Oversee a team of Master Cooks, Cooks, and Pantry Workers.
• Lead employee coaching and training fostering a productive and professional kitchen environment.
• Maintain food quality and consistency, ensuring stations are properly stocked and well-presented.
• Utilize computer skills for menu planning, Excel-based order guides, and Outlook-based communications.

THE IDEAL CANDIDATE:

• At least 21 years of age or older.
• High School Diploma, GED, or educational equivalent.
• 2 or more years of prior relevant experience in a high-volume restaurant, production kitchen, or fine dining restaurant.
• Advanced knife skills in a high-volume kitchen.
• Supervisory experience.
• Computer experience with Microsoft products such as Excel, Outlook, and Word.
