The Cook’s primary responsibility is to prepare the highest quality food consistently and efficiently to Harkins’ recipes and standards, as well as prepare and portion food products prior to cooking. The cook will also perform other duties in the areas of food and final plate preparation, including plating and garnishing of cooked items, as necessary. The cook plays an integral part in the financial success of the restaurant by preparing high quality dishes and minimizing waste.
Essential Functions
• Communicate promptly, courteously, and effectively with all guests, management, and fellow team members.
• Stay up to date and well versed in the BackLot brand and items offered.
• Maintain a clean working environment and follow operating checklists.
• Complete daily prep list, maintain station throughout shift, follow all specifications, and stock items as needed to ensure a smooth service period.
• Rinse and cut raw food products.
• Prepare items for broiling, grilling, sautéing or other cooking methods.
• Prepare menu ingredients, portion products, and follow recipes to ensure plate presentation looks great and is consistent. Follow proper plate presentation and garnish set up for all dishes.
• Comply consistently with portion sizes, quality standards and kitchen rules, policies, and procedures.
• Understand and follow proper rules of hygiene and food safety measures.
• Handle, label, store, and rotate all products properly.
• Conduct proper temperature checks of all food and document using the appropriate standard procedures.
• Follow sanitization standards, ensure workstations stay clean, organized, and follow all food handling standards.
• Maintain a professional appearance and working environment while setting a positive and professional example.
• Able to prioritize and work on multiple projects and tasks with frequent interruptions while maintaining flexibility and composure to ensure smooth and efficient operation of the kitchen, as directed.
• Set ambitious standards for self while maintaining company standards, policies, and procedures to always ensure delivery of the ultimate entertainment experience.
Additional Duties
• Regular attendance and physical presence at the work site.
• Stay informed of daily operations, special events, promotions, and updated policies/procedures.
• Assist the team with additional tasks and/or special projects, as assigned.
• Requires bending, stretching, reaching, squatting, twisting, standing, walking up and down stairs and on flat surfaces, lifting (up to 50 pounds), interacting with guests and employees, problem solving, and cognitive skills.
Education/Skills/Experience
• Required to be at least 18 years of age.
• Required to obtain and maintain a current food handler’s card and/or food safety certification.
• 1+ year experience in basic kitchen preparation preferred.
• Available to work nights, holidays and/or weekends.
• Able to speak, read, write, and understand the primary language(s) used in the workplace and possess basic math skills, be fiscally responsible and operate a point-of-sale system.
• Able to work in a fast-paced, loud environment, with multiple flashing lights, while in a standing position for extended periods of time.
• Capable of remaining calm and using good judgment in all situations.
• A professional image with an increased attention to detail, well organized and a desire to serve guests and enjoy working as part of a team.
