About the role

The Director of Restaurants is directly responsible for the strategic direction, coverage, and operations of food and beverage at the Cloister which includes Tavola, River Bar, Georgian Rooms and In Room Dining. This role will support the Resort Director of Food and Beverage and will be instrumental in implementing and giving direction to the Food and Beverage team members at the Cloister to provide a product and level of service which is consistent with ultra-luxury expectations, while achieving optimum profitability and maintaining the financial control of departments. This role functions as the strategic, hands-on operations leader assisting with implementing company goals and strategies.

Minimum Requirements:

· Minimum five (5) years’ experience in senior food and beverage leadership role at a comparable 4- or 5-star hotel or resort, restaurant, or catering facility.

· Experience Delivering service standards to various levels of staff

· Possess strong food and beverage service training and product knowledge

· Strong wine and beverage background

· Bachelor’s degree preferred

· Excellent Communication skills, both written and verbal

· Valid Georgia Driver’s License

· Proficient in Windows XP and Microsoft Office software application such as: Word, Excel, PowerPoint and Outlook

· Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with coworkers efficiently and effectively

· Must have patience and the ability to deal with problems involving several variables in changing situations

· Must be detail oriented and able to manage competing priorities in a fast-paced environment

· Must have ability to courteously present information to people in one-on-one and group situations

Tasks/Responsibilities:

· Directly supervise the Front of House outlets operation and leadership teams

· Ensure full leadership coverage throughout Cloister F&B outlets daily

· Contributes to making efforts for the Cloister with regards to member’s programs and special functions

· Complies with operating and capital budgets and financial plans

· Continually monitors performance in relationship to financial goals

· Reviews and develops pricing policies

· Works with Resort Controller to audit biannual competition studies and recommend changes in pricing structure

· Guides, Coaches, Counsels, Develops, and Inspires direct reports in a leadership role which promotes teamwork and maximum productivity

· Works closely with Human Resources Training Department to monitor the Food and Beverage managers with interact programs

· Interview, hire, train, discipline, and coordinate terminations when necessary for all Cloister food and beverage employees

· Plans professional growth and development of subordinates, including the implementation of cross-training

· Plan program of continuing professional education annually

· Maintains working relationships with other departments, promoting communication and cooperation

· Supervises any employees, regardless of department, working in dining and beverage service areas, including culinary

· Helps develop the finest Food and Beverage operation for the Cloister

· Report to work at the scheduled time, neatly groomed, in a clean uniform, and following company Dress Code policy

· Maintain cleanliness and organization in all work areas

· Uphold appropriate departmental standards of quality/timing

· Report all equipment problems and maintenance issues

· Attends all scheduled employee meetings and brings suggestions for improvement

· Willing and timely execution of other duties as delegated by leadership

· Understand and support the cultural evolution of Sea Island as a whole

Physical Requirements:

· Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods

· Must have the ability to work for extended time periods in an outdoor environment, including sun, heat, cold, wind, rain, and higher than normal noise levels
