The Restaurant at JUSTIN is looking for a full-time Commis (Prep Cook) to join our team! As a Commis (Prep Cook), you will be responsible for preparing all culinary dishes in your section, as well as performing basic preparation for the Chef de Partie (Line Cooks). A successful candidate should have a strong understanding of general culinary functions, be highly organized, and be able to thrive in a high-pressure environment. You must reliably execute orders given by the Head Chef and Executive Sous Chef.
This position is based at the JUSTIN Estate: 11680 Chimney Rock Road, Paso Robles, CA. The work schedule is Tuesday - Saturday (7:30 AM - 4:00 PM); with Sundays and Mondays off. The person in this role must be flexible with their schedule according to team or business needs.
Job Description
- Operate various kitchen equipment, including slicers, food processors, griddles, French tops, ovens, burners, mixers, and knives
- Read and prepare simple recipes according to department standards
- Prepare and plate food based on set menus and standardized recipes while ensuring minimum waste
- Turn on all equipment needed for daily preparation such as steamers, food warmers, ovens, hoods, and tilt skillets
- Communicate any product or service issues, as well as opportunities for improvement, to management in the kitchen area
- Assist the chef, cooks, and other kitchen staff in preparing menu items by prepping various ingredients, including vegetables, pasta, vinaigrettes, and extruded pasta
- Deliver and stock supply items in their designated areas accurately and promptly, while organizing and maintaining all storage areas
Qualifications
- Previous experience in a kitchen is preferred but not required
- Demonstrated ability to work well under pressure and thrive in a fast-paced environment
- Ability to take direction and execute appropriate tasks and processes
- Exceptional attention to detail and a passion for food and wine
- Calm and approachable demeanor
- Excellent time management and organizational skills
Pay Range: $19.50 - $21.50 per hour. Final compensation will be dependent upon skills and experience.
