JOB TITLE: Director of Food & Beverage                      

REPORTS TO: General Manager

SUPERVISES: All F&B Outlets

 

PRIMARY OBJECTIVE OF POSITION:

The Food & Beverage Director is responsible for assuring luxury outlet offerings, maintaining adherence to budget, and the quality of overall product. The Director of Food and Beverage is also responsible for improving revenue to meet or exceed the budget in all outlets. The Director of Food and Beverage is responsible for directing and organizing the activities of the Food and Beverage Department to ensure a consistently high-quality food product while at the same time developing his/her team and driving a positive work environment. The Food & Beverage Director is charged with consistently improving guest and employee satisfaction. 

RESPONSIBILITIES AND JOB DUTIES:

  • Plan and direct the functions of the Food and Beverage Department to meet the expectations of a luxury hotel environment.  
  • Oversee the implementation of quality menu development throughout the hotel. 
  • Clearly describe, assign, and delegate responsibility and authority for the operation of the various food and beverage sub-departments, e.g. room service, restaurants, tea service, banquets, kitchens, steward, etc.
  • Develop, implement, and monitor concepts and schedules for the operation of all restaurants and bars to achieve a profitable result.
  • Participate in the creation and implementation of attractive, merchandising menus and environments designed to attract luxury customer market. 
  • Implement effective control of food, beverage, and labor costs among all sub-departments.
  • Regularly review and evaluate the degree of customer acceptance of the individual outlets and banquet service. 
  • Make recommendations on marketing policies whenever declining or constant sales imply dissatisfaction by the customers, a material change in the make-up or the customer market, or a change in the competitive environment.
  • Develop (with the aid of sub-department heads) operating tools necessary and incidental to modern management principles, e.g., budgeting, forecasting, purchase specifications, recipes, portion specifications, menu abstracts, food production control, job descriptions, etc.
  • Continuously evaluate the performance and encourage improvement of the personnel in the food and beverage department.  Plan and administer a training and development program with the support of the Director of L&D, to provide well-trained employees at all levels and permit advancement for those persons qualified and interested in career development. 
  • Participate in coverage requiring constant monitoring throughout hotel and outlets for the purpose of troubleshooting problems.
