About the role

As a Senior Sous Chef at Sea Island, you deliver extraordinary guest experiences every day, sharing your passion for genuine hospitality in your
commitment to enriching lives. In this role, you manage and execute the culinary vision of a specific outlet to include leading day-to-day kitchen
operations, menu creation, financial management, and team leadership.

You are responsible for the production of consistent quality product and remain accountable for guest satisfaction by ensuring Sea Island’s high
standards are met. You assist in purchasing, receiving, storage, issuance, preparation and presentation of food items, and control physical areas
where food preparation occurs. You manage kitchen expenses to maximize the profitability of culinary operations while delivering the highest
quality product to our guests within budget guidelines, and effectively manage labor through scheduling, monitoring, and adjusting based on
departmental needs.


Your responsibilities also include assisting in interviewing, hiring, and development of team members, evaluating performance, setting goals,
building team morale, motivating, and taking corrective actions when necessary. You assist in training team members and accurately maintain
training records. Leading by example, you execute as a member of the line staff when needed by working cohesively in a variety of cooking
methods to assure timeliness, efficiency, and product integrity.


You provide input to Food and Beverage leadership to determine adjustments to operations based on sales and guest preferences, participating
in innovation of cuisine to reflect industry trends and guests' palates. You show continual attention to detail in analyzing service quality issues,
addressing concerns in a timely and efficient manner, and taking necessary steps for improvement. When needed, you act to promptly resolve
guest issues, coordinating necessary efforts and consistently following-up to ensure resolution.


You consistently uphold and ensure compliance with departmental procedures, including standards for safety, quality, timing, attendance, and
appearance. You take pride in making sure all work areas are sparkling clean, safe, and well organized. You conduct routine safety and sanitation
inspections to maintain Sea Island’s F&B standards while meeting or exceeding local, state, and federal health and safety regulations.


You form effective relationships and work closely with all resort departments, promoting interdepartmental collaboration, open lines of
communication, and a positive and professional work environment. This involves attending related meetings and ensuring details are clearly
relayed to create a seamless service experience. You also assist in other departments when necessary or dictated by business levels. You support
the delivery of exemplary guest service to guests and members by maintaining a thorough knowledge of current services, amenities, activities,
dining options, shops, local attractions, and historical information regarding Sea Island and the surrounding area.

Job Requirements: 

• Relevant culinary qualification and experience in a hotel, luxury resort, or quality restaurant
• Maintain all State and Sea Island required kitchen related certifications and trainings
• Possess a valid Georgia driver’s license, and maintain all Sea Island driver requirements
• Above average knife skills, as well as proficiency in various cooking techniques and kitchen equipment
• Ability to follow standardized recipes, determine proper cooking times, temperatures, and methods
• Proficiency in Microsoft Office software applications (Word, Excel, Outlook) and office equipment
• Physical strength and stamina to perform a Culinary operations role, maintain ongoing, prolonged physical
activity throughout a scheduled day to include lifting 50+ pounds, working indoors and outdoors in varying
weather, comfort with noise levels, electrical, chemical, and fume hazards with or without a reasonable
accommodation. Ability to kneel, squat, climb, stand, sit, balance, reach, stretch, bend, push, pull, and walk for
prolonged periods
• Timeliness and flexibility – you agree to work a flexible schedule. We work at peak business hours, which for us
includes weekends, early mornings, evenings, and holidays
• Excellent time management skills
• Excellent communication skills in English, both written and verbal
