Jeffrey A. Miller Hospitality Group, a leader in high-quality hospitality and exceptional cuisine for events in the Tri-State area, is seeking a talented full-time lead chef to join our expanding aviation culinary team called Sparrow Cuisine. The Aviation Catering Lead Chef oversees kitchen operations including inventory control, menu development, and staff training. This role ensures high standards of food preparation and order fulfillment in a fluctuating environment with a 8 PM – 4 AM schedule every Monday – Friday.

Key Responsibilities
- Kitchen Oversight: Coordinate daily prep schedules and delegate tasks effectively at our commissary in Lansdowne, PA 19050. Implement prep and stock management guidelines, as necessary. Train prep staff on culinary procedures, food safety, and quality control.
- Order Fulfillment: Oversee the accurate and timely completion of all catering orders. Assemble meal components with precision and attention to detail to ensure consistency in portioning, presentation, and packaging.
- Food Preparation: Assist in stocking kitchen according to established par levels, prepare food items according to standardized recipes and specifications, and handle custom and off-menu requests as needed.
- Collaboration with Aviation Manager: Work closely with the Aviation Catering Manager to refine and expand menu offerings and establish detailed recipes and preparation pars to ensure consistency and quality.
- Team Support: Assist the packer with order assembly and driver with deliveries, as necessary during peak periods.
- Health & Safety: Follow all HAACP and SERV Safe guidelines for food handling, storage, and sanitation. Maintain a clean and organized workstation at all times.
Qualifications
- 3+ years of culinary experience; leadership experience in catering or aviation preferred.
- Flexibility to work early morning, late-evening, and weekend shifts as required.
- Valid Driver's License and ability to commute to Lansdowne, PA.
- Proven ability to read and follow recipes, portioning guidelines, and detailed packaging specifications.
- Experience training, mentoring, and leading team members in a fast-paced environment.
- Self-starter who works independently while maintaining quality and consistency standards.
- Excellent communication and interpersonal skills for effective collaboration with clients, vendors, and colleagues.
- Knowledge of food safety regulations and best practices.
- Physical stamina to stand for extended periods and lift heavy objects.

Compensation & Schedule
- $25 – $30/hr depending on experience
- Monday – Friday
- 8 PM – 4 AM
