Hard Rock Casino & Hotel Tulsa is hiring an Executive Chef to be responsible for the overall culinary vision and execution across all dining venues, including high-volume and fine dining restaurants, banquets, in-room dining, and partner concepts. This position demands a strategic leader with extensive culinary expertise, strong financial acumen, and exceptional team management skills.
- Lead the execution of all food and beverage strategic initiatives impacting the culinary team.
- Develop and manage the annual culinary budget, ensuring cost-effective operations.
- Oversee the implementation of policies, procedures, training programs, and menus.
- Recruit, train, supervise, and mentor property chefs, driving employee engagement and performance.
- Monitor customer satisfaction and recommend menu adjustments as needed.
- Develop new menu items, standardized recipes, and presentation standards.
- Implement production worksheets and waste management processes.
- Lead culinary concept development for all venues.
- Manage the selection, purchasing, storage, and inventory of food and beverage products.
- Control food and labor costs, driving profits and managing expenses.
- Implement employee engagement and culture strategies.
- Approve hiring and termination decisions for kitchen staff.
- Ensure compliance with internal procedures and regulatory requirements.
- Maintain high standards of safety, health, sanitation, and cleanliness.
- Adhere to all Tribal and State health department regulations.
- Culinary Arts Degree.
- At least 10 years of experience as an Executive Chef or Assistant Executive Chef, or equivalent experience.
- Experience in a similar gaming resort setting.
- Leadership experience at a multiple-outlet property with a large-scale banquet business.
- Experience with inventory management purchasing systems (e.g., Birch Street, Stratton Warren) preferred.
- Working knowledge of Microsoft Office products.
- Ability to design and create menus for various dining styles.
- Ability to write recipes and portioning specifications within budgetary constraints.
- Ability to read and write English.
- Ability to respond to visual and verbal cues.
- Professional appearance.
- SERV Safe certification.
- State-issued Alcoholic Beverage License.
- Ability to obtain and maintain required gaming licenses.
- Ability to lift up to 50 lbs.
- Ability to work varied shifts, including weekends and holidays.
- Ability to travel, including overnight stays.
