About the role

Oversees food production operations with an emphasis on high quality meal preparation, nutrition, sanitation, safety, and regulatory compliance. Combines clinical nutrition expertise with food service leadership to support menu development, special diets, kitchen operations, and staff training. Collaborates closely with Food Services staff and Clinical Dietitians to ensure that all menus and recipes align with established wellness and nutrition standards. Upholds organizational policies as well as all applicable federal, state, and local regulations across Boys Town’s settings.

MAJOR RESPONSIBILITIES & DUTIES:

  • Recruits, hires, trains, schedules, and evaluates food service personnel.

  • Establishes daily work assignments, communicates production expectations, distribution, care of the kitchen and monitors staff performance.

  • Leads staff communications, including daily huddles and ongoing coaching.

  • Provides continuous training on special diets, allergens, safe food handling, nutrition best practices, and wellness initiatives.

  • Maintains excellent customer service and client relations standards.

  • Reports staffing, operational, and performance updates to the Food Services Director.

  • Oversees daily food preparation, cooking, and service to ensure quality, proper portion control, and adherence to standardized recipes.

  • Prepares and distributes daily production records, recipes, and portion forecasts for kitchen staff.

  • Ensures meals meet all dietary requirements, including allergies, texture modifications, and therapeutic diets.

  • Evaluates new products, recipes, and equipment to support nutritional and operational goals.

  • Assists with menu planning, entry, and implementation across Boys Town programs.

  • Serves as Boys Town’s content expert for nutrition-related questions.

  • Provides nutritional support to healthcare, residential, educational, and food service teams as needed.

  • Ensures all menus and items within the nutrition database meet dietary guidelines and regulatory expectations.

  • Validates menu substitutions for nutritional equivalency.

  • Maintains and updates recipes in the nutrition database, ensuring accurate traits, compliance, crediting, and nutrient profiles.

  • Delivers internal presentations or speaking engagements on nutrition, wellness, and dietary standards as requested.

  • Ensures compliance with all relevant regulatory standards (CMS, Joint Commission, USDA, state health regulations).

  • Monitors and enforces adherence to HACCP (Hazard Analysis Critical Control Point), sanitation and safety.

  • Prepares for and supports internal and external audits and inspections, ensuring accurate and up‑to‑date documentation.

  • Reports any operational, safety, or facility concerns to the Food Services Director.

  • Reports observed changes in patient or youth condition to appropriate personnel.

  • Manages inventory of food and supplies; places, tracks, and receives orders.

  • Implements cost‑effective purchasing strategies to reduce waste and prevent shortages.

  • Maintains required operational documentation, including temperature logs, cleaning schedules, production records, menus, and tray card information.

  • Ensures accurate nutritional information is available at point of selection for all menu items.

  • Provides regular operational reports, updates, and recommendations to the Food Services Director.

  • Collaborates with Boys Town National Research Hospital, Residential Treatment, Education, and Medical teams to align nutrition practices with youth needs.

  • Supports program development, quality improvement initiatives, and wellness programming within Food Services.

  • Monitors satisfaction surveys, plate waste, and program feedback; recommends and implements improvements.

  • Serves as backup for food preparation and delivery staff as needed.

  • Assists with receiving deliveries and coordinating delivery for meal and goods distribution, including support to BTNRH.

KNOWLEDGE, SKILLS, AND ABILITIES:

  • Knowledge of caloric and protein requirements.

  • Ability to utilize a variety of computer programs to manage work, familiarity with Windows and Office programs.

  • Ability to make assessments and problem solve.

  • Ability to work with minimal supervision.

  • Ability to communicate in an articulate, professional manner and to build and sustain successful, professional relationships.
