ALL FULL TIME POSITIONS:     In addition to your pay, your salary also includes Medical, Dental and Vision Insurance. The Biweekly deduction from employee paycheck is $40.00 for Employee Only, $95.00 Employee plus Children, $120.00 Employee plus Spouse, and $140.00 Employee plus family.  

Job Summary:

The Food Analyst goals for the Director of Finance are to interpret data for Food & Beverage and analyze results using statistical techniques. The analyst should be able to develop, analyze, and report on finds, they will also be responsible for monitoring the quality control and to identify improvements. 

Essential Functions:

• Conduct regular spot-checks to assure compliance with standard purchasing, receiving, storeroom & inventory management control procedures. 

• Prepare with the Executive Chef for weekly food production forecast for each food outlet. 

• Develop accurate menu, recipe costing data and food cost potential for each food outlet

• Establish beverage cost potentials for each outlet and re-calculate beverage cost potentials every six month.

• Coordinate with Internal Audit in investigating for all food and beverage sales

• Determine the cost of each beverage function through inventory calculations

• Attend weekly Food & Beverage Department Meetings and Food Sales Forecast meeting

• Prepare and distribute the monthly Food & Beverage Cost report

• Prepare weekly F&B reports for administration.  

• Any additional duties as assigned by the Food and Beverage Director, General Manager, Business Committee or representative of upper management.

Factor 1: KNOWLEDGE REQUIRED BY THE POSITION 

• Must have good knowledge of food and beverage costing and controls

• Minimum 2 years’ experience in Food & Beverage Controller position

• Must have excellent organizational and communication skills

• Sociable, outspoken with impeccable grooming and excellent presentation.

• Knowledge of County, State, Federal, and Citizen Potawatomi Nation health codes, rules, regulations and statutes. 

Factor 2: SUPERVISORY CONTROLS

• Incumbent is under very general and limited supervision of the General Manager, Finance Department, Citizen Potawatomi Nation, Grand Casino.

• Supervisor assigns work on information regarding the objectives, priorities and deadlines. 

• Incumbent handles all work independently according to established policies and accepted practices. 

• Supervisor assigns work in terms of project objectives and basic priorities and is available for consultation in resolving complex or controversial issues. 

• Incumbent independently plans and carries out the projects and selects the approaches and methods to be used in solving problems. 

• Completed projects are reviewed to determine that objectives have been met and are in compliance with higher authority policies and regulations. 

Factor 3: GUIDELINES

• Incumbent uses generally accepted accounting principles of the United States consistent with the Citizen Potawatomi Nation accounting system as guides and employer standard operating procedures, in addition to handbooks, policies, and precedents. 

• Guidelines include Citizen Potawatomi Nation Gaming Commission regulations and directives as they relate to accounting records for casinos. 

• The Incumbent implements adaptations in dealing with problems and unusual situations always with the best interests of the Citizen Potawatomi Nation and Grand Casino in mind. 

Factor 4: COMPLEXITY

• As the level of difficulty increases, the incumbent considers differences in the courses of action and refines methods or develops new techniques, concepts, theories, or programs to solve problems.
