Job Description

The Food & Beverage General Manager oversees multiple F&B outlets on the property, ensuring seamless operations, exceptional guest experiences, and consistent achievement of financial and performance goals. This role is responsible for directing and coordinating all aspects of restaurant operations, including staff management, training, compliance, and profitability. The General Manager leads by example, implementing and maintaining service standards, operational procedures, and training programs to drive excellence. Working closely with supervisors and team members, this position will create a culture of accountability, teamwork, and continuous improvement while upholding the company’s values and service standards.

As a Food and Beverage General Manager, you will:

  • Maintain accurate and up-to-date standard operating procedure manuals, including service standards, cash handling protocols, menu item preparation, product specifications, safety and security measures, purchasing, ordering, receiving, stocking, requisitioning, and internal audit policies.
  • Train and guide supervisory staff to uphold and enforce established standards.
  • Develop and oversee staff training programs and sales incentive initiatives designed to increase sales, achieve budgeted check averages, and maximize profitability.
  • Conduct formal performance evaluations for all restaurant staff to ensure accountability and continuous improvement.
  • Deliver exceptional service to both owners and guests, ensuring a positive dining experience.
  • Create and adjust staff work schedules to maintain appropriate labor coverage for each shift, meeting service standards and budgeted guidelines.
  • Organize and lead regularly scheduled training sessions and meetings for all staff within each outlet.
  • Administer disciplinary actions in accordance with company policies and guidelines.
  • Approve discounts and complimentary guest relation checks within department standards.
  • Oversee the selection, interviewing, orientation, and training of new hires, ensuring all processes align with company and departmental guidelines.
  • Design and implement ongoing training programs to enhance staff performance and professional development.
  • Provide comprehensive training to ensure compliance with state health regulations and food safety standards.
  • Prepare weekly revenue forecasts and create staffing schedules aligned with established guidelines.
  • Manage and control front-of-house operating expenses in alignment with budgeted sales goals.
  • Ensure outlets operate within budgeted parameters and meet financial targets.
  • Participate in the company’s monthly Goals & Measurements Program to track performance and progress.
  • Maintain par stock levels for each outlet in accordance with departmental procedures.
  • Oversee liquor and beverage requisitions, ensuring compliance with company policies and inventory controls.

Qualifications

  • A minimum of 5-year experience in a similar role.
  • In-depth knowledge of restaurant best practices.
  • Must be able to work flexible hours, including nights, weekends, and holidays.
  • Proven track record of successfully managing budgets, controlling costs, and driving revenue growth.
  • Demonstrated experience in training, mentoring, and developing staff to achieve performance goals.
  • Strong knowledge of health and safety regulations, including compliance with state and local food safety laws.
  • Experience in implementing and managing standard operating procedures (SOPs) and maintaining high-quality service standards.
