We are seeking a Campus Registered Dietitian Nutritionist to support nutrition and wellness programming at a mid-size private university in Chicago, Illinois. The ideal candidate will be an experienced, creative, hands-on nutrition professional who enjoys helping college students thrive through a nourishing dining and educational environment. The successful RDN will work closely with culinary, marketing and sustainability to help students navigate on-campus dining halls and provide interactive tabling and educational events, participate in teaching kitchens and host presentations that support the entire college community. 

The RDN provides nutrition education and training support to the campus community including table events in resident and retail dining, lunch and learn sessions, one-on-one consulting and more. Our Dining Services RDN will be responsible for developing and implementing corporate wellness programming, customizing it to the campus community. This role also provides nutrition-related training to all associates including food allergen management training.  

Job Summary

KEY RESPONSIBILITIES:    

  • Provides nutrition education and training support for the college campus community including tabling events, lunch & learn sessions, and one-on-one nutrition counseling
  • Implements corporate wellness programming
  • Oversees and maintains the policies and procedures of foodservice certifications and nutrition programs
  • Conducts thorough wellness and foodservice audits and enforces federal menu labeling laws 
  • Assists culinary team in planning and reviewing menus that meet predetermined nutritional, cost, and organizational parameters. Provides computerized nutritional analysis of menus and implements modifications required to meet customer needs
  • Coordinates with the dining management team and culinary associates to meet dietary needs for all customers (college students, staff, and faculty)
  • Works closely with culinary team to ensure food offered to all guests (students, faculty, guests, and employees) is inclusive, consistent, and of superior quality  
  • Monitors FDA menu and signage compliance and accuracy in dining and retail
  • Provides nutrition-related training including food allergen and celiac management training to all associates
  • Conducts in-service education and training to food service associates required to meet regulations and nutrition-related topics to support job enrichment
  • Works with culinary team to co-lead hands-on teaching kitchens to help students learn basic and advanced culinary skills
  • Develops and implements nutrition education programs for Residential Dining operations
  • Develops and implements presentations for students, student organizations, and faculty and staff on nutrition related topics
  • Assists students with special dietary needs (food allergies/intolerances, celiac disease, halal, kosher, etc.). Establishes and maintains communication with parents and health care providers as necessary  
  • Provides guidance and practical experience to dietetic interns as a dietetic internship preceptor
  • Actively partners with student organizations and other departments within the university for wellness initiatives and tabling events
  • Maintains excellent relationships with students, faculty, guests, and client as well as other departments within the community
  • Directly manages allergen certification and relationship with Halal certifying body (IFANCA)

QUALIFICATIONS: 

  • A minimum of 3 years of experience as a registered dietitian nutritionist (RDN), credentialed by the Commission on Dietetic Registration (CDR)
  • Licensed by the Illinois State Dietetics Licensing/Credentialing Board 
  • Contract food service experience and knowledge of P&L accountability a plus
  • Strong leadership and project management skills
  • Excellent communication skills—interpersonal and written
  • Experience in menu/recipe building and enforcing FDA menu labeling a plus
  • Ability to lead and train foodservice associates and dining team
