Assistant General Manager - Lemongrass - Aria

THE JOB:

Lemongrass, the first Thai restaurant to open on the Strip, is seeking an Assistant General Manager to support the General Manager in providing direction and leadership for the Assistant Manager and Restaurant Service team, in alignment with the MGM brand. The Assistant General Manager shares responsibility for leading the team to achieve the operational and financial goals of the venue, maintaining high service standards, and ensuring high customer satisfaction and an exceptional guest experience.

THE DAY-TO-DAY:

• Product Knowledge: Maintain excellent knowledge of the venue’s food and beverage products, menu items, and equipment used in performing duties.

• Guest Interaction: Frequently interact with guests to ensure satisfaction and enjoyment of their dining experience. Collaborate with the culinary team to ensure a seamless service experience between the kitchen and dining room.

• Lead and Manage Operations: Oversee daily restaurant operations, including fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and marketing strategies to ensure short-term profitability. Execute the restaurant’s business plan and assist the General Manager in developing and implementing tactics to achieve goals and targets.

• Policy and Procedure Execution: Execute policies, operating procedures, training programs, directives, menus, rules, and regulations for the restaurant staff. Lead the restaurant’s implementation of F&B and/or company-wide initiatives and programs.

WHAT YOU MUST HAVE:

• Bachelor degree or 4 years of equivalent work experience.

• 2+ years of prior relevant experience in Restaurant management, Assistant Manager, and Assistant General Manager.

WHAT WILL MAKE YOU STAND OUT:

• Ability to work in a fast-paced environment and manage multiple priorities.

• Previous experience in a luxury or fine-dining restaurant.

• Working knowledge of Point of Sale (POS) systems and operations.

• Exceptional leadership and team management skills.

• Strong knowledge of basic spirits and liquors.
