This role assists in the direction of all aspects of ware washing and cleaning of food preparation areas. Assists in control and store back-up supply of China, glass, flatware, utensils, and small equipment.
Our ideal candidate:
College degree preferred.
At least three years of stewarding or related janitorial experience with one year in multi unit and one year in supervision preferred.
A working knowledge of sanitation requirements.
Experience in all phases of banquets from setup to breakdown preferred.
Certification in sanitation management a plus.
Knowledge of P & L statements and budget.
Must be computer literate.
Ability to administer direct supervision of assigned staff, flexible, patient, understanding, fair and firm.
Must be able to work independently.
Must be able to work in a fast-paced environment.
Must be able to obtain a San Diego County Food Handler’s card.
Must be able to perform physical job duties of line employees in emergency situations.
Assists Manager of EVS and Steward with planning and preparation of annual budget and capital expense requests.
Prepares weekly work schedules for all stewarding personnel.
Establish pars for China, glass, flatware, utensils, and small equipment; reorder as required.
Conducts training programs for stewarding personnel.
Encourages cross training.
Prepares employee for promotion.
Maintains records required for the efficient operation of the department.
Maintains approved labor costs.
Counsel, guide and instruct personnel in the proper performance of their duties.
Must be able to work closely with all phases of management.
Must understand pest elimination.
Assists in the preparation and coordination of periodical performance review of assigned personnel.
In charge of inspecting areas to minimize errors in the kitchen environment.
Recommends changes including hiring, promotion. demotion and release of personnel.
Recommends wage and salary adjustments for personnel within established limits.
- Maintain working relationships with other departments to ensure effective communication.
