Position Overview

The Department of Corrections is looking for a detail-oriented dietary professional with both a strong professional and food operations background. The ideal candidate will serve as the principal dietary manager at the 
Correctional Center and help to ensure that all dietary standards are upheld and complete. We strongly encourage all qualified candidates to apply. 

Job Responsibilities

1. Plans, develops, coordinates, and directs all phases of the food services program for the facility.
2. Serves as full line supervisor.
3. Coordinates food storage, menu, and supply needs.
4. Directs the preparation and maintenance of inventory records (food, supplies, equipment).
5. Monitors and assists individuals in custody with dietary work assignments.
6. Prepares dietary operational reports as required (daily, weekly, monthly, annually).
7. Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.

Minimum Qualifications

1. Requires knowledge, skill, and mental development equivalent to completion of four (4) years of college with courses in nutrition, dietetics, or food service management.
2. Requires three (3) years of progressively responsible administrative experience.
3. Requires possession of either: a) Certification as a Registered Dietitian with the Academy of Nutrition and Dietetics, Commission on Dietetic Registration, and in accordance with the rules set forth in the Illinois Administrative Code Title 68, Chapter 8, Subchapter b, Part 1245: Dietetic and Nutrition Practices Act; OR, b) a Food Service Sanitation Certificate issued by the Illinois Department of Public Health, or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).

Preferred Qualifications

1. Prefers at least three (3) years of professional experience directing and managing all operations related to Dietary Services for a public or private organization.
2. Prefers at least two (2) years of professional supervisory experience assigning work, providing guidance to subordinates, recommending counseling and/or discipline following collective bargaining unit agreements, training staff, preparing and signing performance evaluations and approving time off.
3. Prefers at least two (2) years of professional experience meeting deadlines with strong attention to detail.
4. Prefers at least two (2) years of professional experience developing and interpreting policies and procedures for public or private organizations.
5. Prefers at least two (2) years or monitoring and directing the development and implementation of a comprehensive in-service training program or staff in a food service program for a private or public organization.
