About the role

As a Product Scientist Extrusion Technology, you will:

  • Build extrusion capability for dairy-like ALT product applications in-house
  • Develop high protein structuring technology via internal and external collaborations
  • Test various ALT proteins and their combinations in extrusion
  • Cobine extrusion and enzyme technology to functionalize proteins
  • Produce product prototypes for improved sensory, texture and performance
  • Co-test solutions with application and processing teams for upscaling

First projects to deliver:

  1. Extrusion set-up for cheese extrusion: formulation and basic process conditions
  2. Process optimization map: process impact on final cheese texture and performance
  3. Testing various enzymatically modified proteins in extrusion, process optimization
  4. Extrusion set up to functionalize protein ingredient
  5. Pea protein “microparticulation” for creamy mouthfeel

So, what does it take to be successful in this role?

MSc in the field of food science, food process engineering, food ingredient functionality or similar. 1-2 years working experience “hands-on”. Like hands-on work, can combine learnings cross-teams

  • Understanding the link between ingredient functionality, microstructure and product properties
  • Ability to translate ingredient properties to targeted benefit: taste, texture, performance
  • Understanding processes and processing impact on microstructure (eg impact of share, homogenization, temperature.)
