ABOUT OUR ROLE 

As a Prep Cook, you will work closely with the BOH Team to ensure that all ingredients and meals are prepared in a timely, efficient, and high-quality manner. This role requires strong foundational prep experience, including sauce preparation, butchery, and vegetable fabrication.


You will play a key role in supporting service by executing proper prep techniques, maintaining consistency, and ensuring all dishes meet Trailborn’s culinary standards. The ideal candidate has a passion for culinary excellence, strong knife skills, and the ability to thrive in a fast-paced, team-oriented kitchen.


Ultimately, you will help us deliver an exceptional dining experience to our guests through precision, preparation, and teamwork.

ESSENTIAL 

FUNCTIONS 


  • Prepare sauces, proteins, vegetables, and other ingredients according to company recipes and scratch-kitchen standards.
  • Perform butchery and vegetable fabrication with precision and consistency.
  • Execute prep lists efficiently to ensure readiness for service.
  • Prepare dishes according to company recipes, portion guidelines, and presentation standards.
  • Maintain comprehensive knowledge of the menu, ingredients, and preparation methods.
  • Accurately read, measure, and execute recipes.
  • Ensure quality, consistency, and attention to detail in all food prepared.
  • Maintain a clean, organized, and safe workstation in compliance with health and safety regulations.
  • Follow kitchen policies, procedures, and service standards at all times.
  • Communicate effectively with management and team members to coordinate service.
  • Assist other team members with cooking and preparation as needed to meet service demands.
  • Contribute to a positive, cooperative, and team-oriented work environment.
  • Perform other duties as assigned.

QUALIFICATIONS 

Required Qualifications

  • Proven experience with sauce preparation, butchery, and vegetable prep.
  • Strong knife skills and understanding of proper culinary techniques.
  • Experience in a fast-paced kitchen environment.
  • Passion for cooking, creativity, and strong attention to detail.
  • Commitment to quality, teamwork, and a positive work ethic.

Preferred Qualifications

  • Food Handler’s Certification or equivalent.
  • Culinary School completion (preferred).
  • Experience in a high-volume restaurant.
  • Strong communication skills.
  • Ability to multitask, stay organized, and perform under pressure.

PHYSICAL 

REQUIREMENTS

  • Stand and walk for extended periods (8–10 hours per shift).
  • Lift and carry up to 50 lbs. (pots, pans, boxes of supplies).
  • Frequently bend, stoop, reach, and navigate tight spaces.
  • Maintain manual dexterity and hand-eye coordination for detailed prep work.
  • Work effectively in a hot, fast-paced environment near ovens and stoves.
  • Read recipes and monitor food quality with visual accuracy.
  • Communicate clearly with team members.
  • Sustain physical stamina for long, high-pressure shifts.
