Job Summary

St. Thomas West is an acute care, Level II trauma hospital featuring bed side ordering for patient meals with 541 beds and a current average census of 350-387. We also operate a 24-hour cafeteria and provide catering services.  As the Senior Sous Chef, you will be responsible for assisting in the successful operation of the Culinary Department at a hospital including retail cafe, patient meals, and catering. You will supervise preparation, and cooking of various food items, developing daily menu items and their preparation and garnishment. You will assist supervise hourly associates and working with the Executive Chef to develop new menus and assist with ordering, inventory, and other back of house functions. This is an opportunity for an energetic, entrepreneurial Culinary professional.  

 

 

Key Responsibilities:

• Assists with managing cost controls and control expenditures for the account
• Developing, planning and creating menus; produces and executes catering events
• Rolls out new culinary programs in conjunction with Company marketing and culinary team
• Purchasing, ordering, receiving and inventory oversight with administrative functions
• Scheduling, training, and leadership of culinary associates

 

 

Preferred Qualifications:

• 2+ years of progressive culinary/kitchen management experience
• Culinary Arts degree or certification
• High volume, complex foodservice operations and catering experience
• Institutional and batch cooking experiences 
• Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
• Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
• Must be willing to participate in patient/client satisfaction programs/activities 
• ServSafe certification
• Experience with purchasing/ordering and inventory is required
• Experience in a hospital or healthcare related environment
