The Role
As a full-time Butcher, you will play a key role in supporting the Club’s culinary operations by ensuring the proper fabrication, portioning, storage, and distribution of meats and seafood for all culinary outlets. You will help maintain the highest standards of product quality, food safety, sanitation, and cost control while keeping the butcher shop clean, organized, and operating efficiently.

What You’ll Do
Prepare and Distribute Proteins: Fabricate, portion, and distribute meats and seafood to all kitchen outlets.
Manage Inventory: Maintain product levels through requisitions, tracking, ordering, and cost control.
Ensure Quality: Monitor product quality, proper handling, and mise en place rotation.
Maintain Cleanliness: Keep all equipment, work areas, and refrigeration clean, organized, and sanitary.
Follow Safety Standards: Adhere to all food safety, sanitation, and Club safety policies; report hazards or injuries promptly.
Support the Team: Assist culinary operations as needed and perform additional duties assigned by kitchen leadership.
Uphold Standards: Promote the MAC Code of Conduct and maintain consistent attendance.
Participate in Training: Attend all required trainings and departmental meetings.

What You’ll Bring
Experience: 2+ years of professional kitchen or butcher experience.
Preferred Background: Butcher apprenticeship and/or culinary training.
Certification: Valid food handler permit.
Technical Skills: Knowledge of meat fabrication, seafood prep, and food safety practices.
Attention to Detail: Strong focus on quality, organization, and efficiency.
Communication: Ability to work effectively with chefs and kitchen staff.
Team Mindset: Professional, reliable, and collaborative approach.
Physical Ability: Ability to stand for extended periods, perform repetitive tasks, lift up to 50 lbs., and work in refrigerated environments using butcher equipment.
Flexibility: Availability to work evenings, weekends, and varying schedules.
