Summary:
This position is responsible for directing and profitably managing a smooth end to end process for all Food Service Operations Hershey’s Chocolate World attraction. A primary component of this position’s accountability includes assuring that HCW all food service operations in both the Savory (Pizza, Bar, Build Your Own, Kitchen Prep, Steward/Dishwashing) and Sweet (Bakery, Ice Cream, Coffee Coacoa) are in peak operating condition and following all food safety and service standards 365 days a year. This includes managing the the Food Service Leadership Team, supporting leadership with for all full-time and part-time employees, enforcing safety and sanitiation polices and procedures, oversee hiring, staffing, training, and development. Responsible food inventories, vendor deliveries, food preparation, and menu planning while adhering to regularty guidelines. The incumbent develops and manages the budget, monitors expenses and margins to maintain a low cost, high value, and profitable operation.

 

This position provides expertise in food service and safety while also providing enhancements to processes to drive strong success for the Hershey Experience. This position ensures that all employees, including influence over others outside of the department, adhere to proper polices, practices and procedures. 

 

This position requires the skills to work in a dynamic environment in order to meet the building demands of high visitor traffic (3+ Million visitors annually), varied hours of operation and changes in the need of the business.


Summary of major duties:
Daily Operations: 
· Provides exemplary products and customer experience. 
· Monitors guest flows to provide fast and efficient service. 
· Collaborates with employee relations to recruit and retain the highest caliber employees. 
· Manages the appearance of the Food Service areas. 
· Works collaboratively with the managers on appearance and quality of all products served. 
· Creating synergies between the food venues in labor planning, employee manage

Financial Management: 
· Develops plans and programs to achieve sales and income targets. 
· Monitors revenue and expenses and provides appropriate business response to both positive and negative results.
 · Develops guidelines for food purchasing and inventory controls and costs, production schedules to meet business needs, cash handling, and register training. 
· Maintains retail pricing, gross margins, labor costs, and related expenses necessary to meet income goals.


Marketing, Creativity, and Innovation: 
· Develops and implements effective business merchandising and marketing strategies designed to insure the appropriate growth and profitability of all business units. 
· Collaborate with Marketing Manager to support Marketing and Merchandise programs, Chocolate World events, and 360 Marketing initiatives. 
· Identifies food trends in the industry and develops new products. 
· Collaborate with Design team to create compelling F&B content for merchandising and social media 
· Provide consultative support to the food service team in the Times Square Chocolate World.


Safety: 
· Develop and implement systems to insure product safety throughout the Food Service Operation.
· Maintain HACCP plans for all Food Service operations. 
· Insures all food venues are in a sanitary, clean, and organized condition. 
· Insure all compliance with Federal, State, and Local laws regulated food service operations. 
· React appropriately to information received from internal or external inspections.

 

Minimum knowledge, skills and abilities required to successfully perform major duties/responsiblities:
Team building skills with ability to inspire and provide leadership in a fast-paced environment to diverse workforce teams, including leadership and hourly teams

· Excellent written and verbal communication skills

· Strong financial skills, budget and planning

· Solid understanding of Food Service Accounting

· Ability to overcoume resistance to change, adapt to change, and lead change

· Knowledgeable in HACCP

· Ability to react quickly to all situations

· Ability to give and receive constructive feedback

· Ability to provide coaching and counsil to employees on performance

· RAMP Certified Preferred

 

A critical expectation of this position maintaining a knowledge of food trends, systems, and practices in the industry to bring product innovation within HCW as well as develop and creatw new food products featuring the Hershey brands.
