About the role

As Junior Product Scientist Emulsion Structure, you will:

  • Build fundamental understanding of emulsion structure
  • Build fundamental understanding of ingredient interactions in complex emulsions for cream performance (heat stability, acid stability, whipping performance)
  • Assess emulsion stability in process and product performance
  • Assess different functional proteins in model emulsions and creams
  • Build analytical toolbox for emulsion characterization
  • Build a model to predict emulsion functionality
  • Validate findings on the pilot scale
  • Build a toolbox for clean label creams

First projects to deliver:

  • Structural understanding of emulsion structure with different functional proteins. Assessing emulsion structure stability in process and model product
  • Building understanding of ingredient interactions in complex emulsions (hydrocolloid, protein, oil) for cream performance (heat and stability, whipping)

So, what does it take to be successful in this role?

MSc in the field of food science, food chemistry, food ingredient functionality food process engineering or similar.

  • Understanding emulsions, emulsifiers
  • Knowledge of methods to characterize interfacial and physical properties
  • Be able to link micro and macro structural properties to computational/predicting models
  • Eye for the detail
