Responsibilities & Key Deliverables

1. Managing the day to day Central Kitchen Operations
2. Managing the equipments of central kitchen with proper upkeep.
3. Checking the Power, Gas, Water Units on daily basis & actions plans to reduce the same.
4. Checking the quality of snacks/food prepared in the shifts & ensure that the production is planned as per the count shared.
5. Equipment maintenance by ensuring the AMC/CMC.
6. Resolving the Civil & Utility issue at Central Kitchen by following up with the concerned stake holders.
7. Ensuring the proper food production as per the head count shared.
8. Timely movement of food from kitchen to dining halls to ensure no line loss.
9. Ensuring SOP for each of the equipments & strict adherence.
10. Ensuring timely maintenance of the equipments with the OEM.
11. Ensuring there is no noncompliance in view of kitchen operations.
12. Ensuring right quality of raw materials being used as per the specification.
13. Ensuring the closure of Fire, Safety, Utility, Civil Points related to Central Kitchen
14. Ensure proper hygiene is maintained at central kitchen & periphery by maintaining the checklist.
15. Work on the automation project for smooth operation of central kitchen
16. Plan the Capex & Opex for the Central Kitchen as per the expansion plan.
17. Ensure disposal of daily waste & ways to reduce the food wastage.
18. Ensuring the personal hygiene of the employees working in central kitchen
19. Knowledge of the Audits & process for ISMS, IMS, ISO, FSSAI, Hira document.
20. Ensuring the inventory of central kitchen equipments.
21. Ensuring sufficient stock of spares required for the kitchen equipments.
22. Handling quality issues arrived in the day to day operations.
