Assistant Pastry Chef

Purpose of Job:

The primary purpose of your job position is to prepare and supervise the production of all desserts for lunch and dinner in accordance with current applicable federal, state and local standards, guidelines/ regulations, and with our established policies and procedures and as may be directed by the Executive Chef and/or Director of Dining services, to assure that quality food service is provided at all times.

Job Functions:

Review and complete catering dessert/pastry needs.

Set up cleaning and sanitizing stations.

Attend and participate in the daily production meetings.

Record food temperatures on production sheets.

Oversee and produce desserts in accordance with pre-established standards of the department.

Assist executive chef with the planning of desserts for special functions and catering events.

Supervise the organization, storage, and rotation of all dessert items ensuring they are covered, labeled and dated accordingly.

Responsibilities:

Responsible for the preparation and assembly of all desserts including catering.

Responsible for creating seasonal dessert menus and recipes.

Insure proper food handling, storage and safety procedures are followed.

Check to see that the next day dessert/pastry functions and all dessert preparations are complete.

Responsible for all dessert products served.

Responsible for the supervision of Assistant Pastry Chef.

Supervises and trains the assistant pastry chef to assume job duties in Pastry Chef’s absence.

Assist executive chef in determining desserts, supplies and equipment needed to operate the pastry area of the main kitchen.
