About the role

Job Purpose or Objective(s):  Manage all kitchen utility operations and staff and maintaining the responsibilities of cleanliness in all dish rooms and kitchens, all bar areas, back dock cleaning and maintenance, property night cleaning and inventory control. You will report to the Executive Chef.

 Primary Tasks:

1.       You will manage sanitation operations to ensure compliance with company standards, procedures, health, safety,  and sanitation regulations.

2.       Monitor and develop team member performance to include providing guidance and professional development,  scheduling, conducting counseling and evaluations and delivering recognition and reward. 

3.       Order necessary supplies to ensure staff has supplies, equipment, tools, and uniforms necessary to do their jobs.

4.       Control F&B sanitation chemicals and the proper MSDS sheets on each product.

5.       You will ensure that the maintenance on all ware washing machines is up to date and running. 

6.       Control inventories of equipment, china, silver, and small ware, and report shortages to designated personnel.

7.       Conduct walk throughs to ensure all kitchens are organized, clean, swept and mopped on regular basis.     

8.       Inspect supplies, equipment, and work areas to ensure efficient service and conformance to standards. 

9.       Help plan, set up and breakdown of special events and sales events as it involves the stewarding schedule and operation.

10.     You will manage department's controllable expenses to achieve or exceed budgeted goals.

11.      Perform other tasks as may be assigned.

Requirements:

·         Associates degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related field, or 2 years directly related experience.

·         SERV Safe Certification

·         Familiar with a wide variety of chemicals, compounds and equipment needed within the department

·         Strong written and verbal communication skills

·         Ability to effectively communicate in English, both written and verbal

·         Moderate computer skills

          Seven (7) years’ experience in the procurement, food and beverage, culinary, or related professional area
