About the Role:

As the Chef de Cuisine, you will collaborate closely with the Executive Chef to maintain our premier lounge, delivering top-tier culinary experiences while managing the budget and exceeding client expectations. Your role will be integral to ensuring safety, sanitation, and maintenance programs, fostering excellent relationships with employees, guests, and clients, and promoting professional growth within your team.

Key Responsibilities:

  • Lead the Delta One food and beverage daily operations, ensuring an exceptional guest experience and unparalleled food & beverage offerings
  • Mentor and develop a passionate, dedicated, and diligent team
  • Ensure compliance with Compass-established policies and procedures
  • Maintain food cost while ensuring quality standards are consistently met (in an a la carte dining environment)
  • Assists Executive Chef to assure compliance with all sanitation, safety, food safety, production, and quality.
  • Motivates, trains, develops, and directs the back-of-house employees to accomplish the objectives of the operation to the satisfaction of the guests and the clients
  • Ensures high-quality food items are prepared to Delta One standards
  • Assists in all phases of planning, ordering, inventory, and food preparation
  • Supports the management of cost controls and controls expenditures for the account
  • Rolls out new culinary programs in conjunction with the culinary teams
  • Establishes and maintains exceptional, impactful rapport with staff, clients, guests, and other departments
  • Performs related duties and special projects as assigned

Preferred Qualifications:

  • 5 years or more of relevant culinary experience - fine dining culinary experience a MUST
  • Mastery of a wide variety of kitchen positions and stations
  • Ability to think on their feet, as well as create, produce, and serve on the fly
  • Knowledge of food cost and how it pertains to a kitchen, product, and quality identification
  • Excellent interpersonal, customer service, and oral/written communication skills
  • Applied food service sanitation certification, ServSafe and/or HACCP federal guideline certification
  • Must be knowledgeable on HACCP controls along with proper storage and use of food
  • Monitor compliance with health and fire regulations regarding food preparation and serving
  • Review work procedures and operational problems in order to determine ways to improve service, performance, and/or safety.
  • Excellent communication skills both written and verbal
  • Proficient in Microsoft applications
  • Exceptional business etiquette and client relations
  • Manages time effectively and prioritizes tasks to meet deadlines
