Summary
We are seeking a dedicated and compassionate WAE/PRN Food Service Specialist to plan and direct the preparation of food, prepare, and serve food as assigned on the daily production schedule. You will estimate food needs and calculate and adjust recipes according to production requirements.
Examples of duties
One year of food service experience in a food service operation; OROne year of training in food technology, food service management, or in a food service-related curriculum in a trade school or technical institute; OR
Twelve semester hours in food and nutrition, dietetics, food service preparation, home economics, or hotel, food service, restaurant, or institutional management.

Job Duties:In the Food Service Specialist role, you will:
- Serve as an advanced-level cook.
- Estimate food needs and requisitions, receive, and distribute food supplies to subordinate cooks.
- Plan and direct the preparation of foods for immediate consumption and the preservation of foods for future use.
- Report to supervisors any unsafe working conditions and defective equipment.
- Oversee assistants in mixing, kneading, and preparing bread, rolls, biscuits, cakes, and pastries.
- Estimate ingredients and requisitions supplies; receive and distribute supplies to subordinates.
- Inspect bakery supplies for conformance to specifications and assess quality and adherence to required quality.
- Assume complete responsibility for the preparation and production of all baked items in accordance with menus prepared by registered dietitians.
- Calculate and adjust recipes according to production requirements and accurately weigh and measure all ingredients to ensure conformity of products.
Position-Specific Details:
Appointment Type: Classified WAE/PRN
Compensation: This position includes a premium pay of $1.00 per hour for each hour physically worked.
Location: Dietary Department of the Northeast LA Veterans Home in Monroe, LouisianaWork Schedule: WAE/PRN employees are only allowed to work 1245 hours within a twelve-month period and are not eligible for or entitled to state benefits, leave earning, and paid holidays.
