This role will be located at one of Discovery Land Company’s locations: The Hills, set outside of East Quogue, New York.

The Hills is seeking a SEASONAL full-time Food and Beverage Supervisor to join the Food and Beverage Service Department for the Summer 2025 season. Employment dates are: May 1, 2025 – September 30, 2025.

The Food & Beverage Supervisor is responsible for the leadership and coordination of the food and beverage operations, overseeing the restaurant outlet. The Supervisor will work to maintain and improve operational standards in the front of the house to ensure that all guests receive the highest level of exceptional and genuine service at all times, reflective of international luxury service standards. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

  • Works to uphold Discovery Land Company Sequence of Service for F&B outlets.
  • Partners with the Food and Beverage and Culinary leadership team to create exemplary culinary standards and an environment of continual improvement.
  • Coordinates restaurant activities with Culinary team to optimize member service.
  • Work with Catering & Events Manager on events.
  • Oversees daily operations of F&B direct service at restaurant outlet.
  • Effectively monitor the operation through observation and teamwork, ensuring presence is always on the floor.
  • Assist with all member or guest issues/concerns in a professional, courteous, and prompt manner.
  • Ensures guest histories are maintained and updated on a daily basis.
  • Schedules working hours of all restaurant employees, taking into consideration the volume of expected business but careful at all times to conserve labor cost. 
  • Oversee the Food and Beverage department standards are adhered to at all times throughout the operation service areas.
  • Ensure all cleaning schedules, temperature records, opening/closing checklists are completed and recorded daily.
  • Ensure fast, courteous, and efficient service, and adherence to safety and service guidelines.
  • Practices and trains up selling to maximize average spend per cover.
  • Ensures all department staff are fully trained through on-going on-the-job training, and trains in yield management skills.
  • Conducts daily briefings to communicate necessary information and to provide objective and constructive feedback to employees.
  • Take time to listen to employee concerns and deals with any challenges in a timely manner.
  • Counsels subordinates in work related matters.
  • Develops team’s focus and attention on F&B Service Standards.
  • Ensures attendance on behavioral and vocational training programs, and personally conducts key training for employees in the outlet.
  • Any other duties as assigned.

Qualifications

  • At least 10 months F&B experience in a leadership service role or similar capacity role with exposure in food and beverage standards.
  • Knowledgeable of HACCP & local food safety standards.
  • Strong leadership skills with the ability to effectively train others and maintain accountability of staff.

  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.
  • Ability to work in a team environment.
  • Ability to stay calm and focused during the busiest of times.
  • Ability to read, write, speak, and understand English; additional languages preferred.
  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.
