JOB DESCRIPTION AND FUNCTION: The Distillery Cook will work primarily in distillery operations (grain handling, milling, mashing, and fermentation) and will migrate to other areas as needed from grain handling to distillation to barrel filling. Assignments can change depending on the current business requirements, and each cook will have the capability and flexibility to run either the 18” Cook System or the 36” Cook System.
POSITION TYPE: Exempt, Full Time: 40+ hours per week Shift: 7:00 AM– 7:00 PM or 7:00 PM to 7:00 AM shifts available. Shifts are on a rotating 12-hour shift (either day shift or night shift depending on crew/shift assignment). Schedule requires working every other weekend.
PRIMARY DUTIES: Primary duties daily tasks will include:

Monitor/Understand grain handling, cooking, mashing, and fermentation systems through computers screens and gauges to oversee and adjust the process accordingly.

Operate grain handling, milling, mashing, and fermentation equipment.

Operate utility systems including but not limited to boiler, chillers, cooling tower, air compressor, RO unit, etc.

Inspect and clean dust collection system
-
Maintain good housekeeping practices and ensure equipment is clean and areas are organized at all times.

Conduct steam sterilization/sanitation of lines and equipment
-
Perform lab procedures for beer chemistry, grain analysis, water, and alcohol.

Follow and maintain all SOP’s.
-
Follow all safety precautions and related OSHA requirements.

Understand process flows and equipment (pumps, agitators, valves, instruments, etc)

Operate Hammer and grind verification
-
Perform normal and emergency startup/shutdown of all equipment.

Perform preventative maintenance as required.
-
Complete all distillery duties as directed by Pl and Management.

Problem solving and troubleshooting skills.

Tracking all raw material components throughout the production and warehouse facilities.

Operation of pumps, motors, agitators & valves to execute daily mashing operations and tank transfers, all related activities

Fermentation Management & Lab Analysis

Track data for multiple in-process fermentations throughout the shift

Run laboratory procedures on daily batches
-
Trouble shoot issues in process & equipment

Cleaning & Sanitation
-
Run CIP (clean in place) procedures with both strong acid and strong base chemicals

Understand and use best practice aseptic techniques for cleaning and sanitizing large tanks and vessels, hoses, pipework, etc.

Utilizing a detailed approach to uphold the highest standards of cleanliness for all customer facing spaces within the process plant

Other Related Activities

Establish and institute procedures to ensure quality control of all products

Establish and institute efficiencies in production of product

Ensure safety of all employees, customers, and guest at distillery
-
Other duties as assigned.
Qualifications/Requirements:
