FUNCTION

The Cook is responsible for safely preparing food items, following menu specifications and standard recipes.

ORGANIZATIONAL LEVELS:

  • Cook I- is the entry-level skilled trade job in this series
  • Cook II- proficient in executing all stations on the line, cross-trained to ServSafe certified
  • Cook III- proficient in prior levels plus cross-trained to outside Completed Leadership Training class.

SPECIFIC DUTIES AND RESPONSIBILITIES COMMON TO ALL LEVELS IN SERIES

  • Ability to operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and
  • Requires reading and math skill for recipes and
  • Ability to read, write, speak and understand recipes and communicate with other Team
  • Responsible for cleaning kitchen work areas and equipment as well as sweeping and mopping
  • Actively participates with staff to cook, prepare, dish-up and assemble all menu
  • Adheres to control procedure for food costs and
  • To encourage and abide by all health codes and hand washing
  • Prepares all food items according to standard recipes and menu to ensure consistency of product to the

STANDARDS OF PERFORMANCE

  • Abilities demonstrated in handling the banquets and food outlet
  • Be in constant communication with BOH Team
  • Maintaining interpersonal working relationship among all
  • Excellent Oral and written communication
  • Ability to work in fast-paced

EDUCATION, TRAINING, AND EXPERIENCE

  • High School Diploma or GED
  • One-year minimum experience in food preparation and food knowledge is preferred.
  • Ability to work both front and back line
  • Must be able to complete any classes or certifications
  • Ability to obtain a valid Racing License Racing
