This role will be located at one of Discovery Land Company’s locations: Troubadour Golf & Field Club set outside of Nashville, Tennessee.

Troubadour Golf & Field Club is seeking a Food and Beverage Manager to join the Food and Beverage Service Department.

The Food & Beverage Manager is responsible for the leadership and coordination of the F&B Operation. Primarily taking responsibility for all outlets which encompass casual dining to fine dining experiences within the club. He/She will work to maintain and improve operational standards for both in the front of house and back of house to ensure all guests receive exceptional and genuine service at all times, reflective of international luxury service standards. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

***Full-time salaried position. The pay range for this position is $85k - $95k depending on experience and background, this position is bonus eligible.***

Key Responsibilities:

  • Entire Clubhouse dining room and bar
  • Speakeasy bar operation
  • Pool/Fitness Food and Beverage offerings
  • Mixology programing by incorporating products from the agricultural components of the garden and greenhouse
  • Responsibilities will include creating operating and team member manuals, creating spreadsheets for inventory and ordering, building relationships with Members, strategic partners, hiring, and training staff, and assisting the team in all aspect of the operation
  • Other responsibilities will include but not be limited to: Scheduling, product inventory, product ordering, training and managing the staff, and maintaining the highest levels of quality and control possible
  • Able to manage the business and adhering to labor cost, beverage cost, and operating costs which should be monitored and kept on budget
  • Creates job assignments for team members to create efficiencies and cross training between the outlets
  • Conducts daily pre-shift meetings
  • Proactively troubleshoots and strives to eliminate mistakes and continuously improves the performance of the service team
  • Maintains beverage inventory and accurately bills the member accounts accordingly
  • Provides daily recaps to the core team
  • Shares member feedback with the team at large to continuously improve

Skills and Experience

  • Minimum of 4 years industry experience
  • Minimum of 3 years’ experience working in a high-end club, hotel or resort, experience with Forbes standards is preferred but not required
  • Opening experience preferred but not required
  • TEI, Seven Rooms and Triple Seat software knowledge preferred but not required
  • Award winning background and track record of excellence and success
  • Understanding and management of a Restaurant business plans including financial models, market positioning, business intelligence, etc.
  • Understanding of budgets and P&L to achieve overall profitability
  • Polished verbal and written communication, fluent in English
  • Excellent training skills, positively interacts with all team members and club members
  • Detail oriented and able to maintain a surgical clean work environment
  • Polished and professional appearance
  • Recruitment of staff, design effective schedules and coach performance
  • Plugged into industry trends and inventive to set new trends
  • Customer service oriented with unquestioned hospitality skills
  • Ability to work a flexible schedule to include weekends and holidays as necessary
  • Ability to meet physical and mental requirements of the position which will include working indoors and outside

Education and Requirements

  • 4-year college degree preferred, but combination of education and relevant position training and experience will be considered
  • Must be able to push, pull and lift 50 lbs.
  • Available to work weekends, evenings and/or holidays
  • Must be able to walk and stand for prolonged periods as needed and able to work in all weather conditions
