Essential Job Functions and Responsibilities:

Assembles food items and delivers trays.

• Refers to daily assignment sheet for the day's duty schedule.  Assembles cold food items for patient tray line following production sheets and verbal instructions.
• Cleans and sanitizes work area upon completion of assembly process.
• Transports assembled cold food items to serving area.  Sets up cold and hot serving stations with proper serving utensils, condiments, china and silverware.
• Inspects flatware, china, and trays for cleanliness, chips or stains, removing any that are not suitable for use.
• Working from color coded menus assembles patient trays; rotating work station on tray line, start station, cold station, hot stations; loading trays.  Assesses food quality and food temperatures throughout the serving and tray assembly process.
• Throughout the day assembles and delivers patient trays as to specifics and food items to patient rooms and nursing units.
   

Performs food handling and clean up duties.

• Upon conclusion of the meal serving, covers food and refrigerates leftovers.
• Cleans equipment and work area.
• As food carts are returned to kitchen all trays and trash are removed, sorted and processed through the dishwasher including recycling where appropriate.
• Cleaned items put away and food trucks cleaned and sanitized.  Cleans and organizes reach-in coolers, walk-in coolers, storage areas, work tables, shelves and drawers.

Performs dishwashing operations.

• Sets up dishwasher for operation, insuring equipment is operating properly.  Sorts dirty dishes, scrapes, sorts and runs through machine.  Inspects dishes as they finish cleaning to be sure all items are clean and stain free.
• Checks wash and rinse temperatures, charts them and notifies supervisor of unusually high or low temperatures.
• Keeps cafeteria fully stocked with all dishes, trays glassware and flatware.  Reports shortages of dish machine soaps and other products to supervisor.

Performs other duties as assigned.

• Operates dishwasher as needed or assigned.  Prepares and delivers daily mid-morning and mid-afternoon nourishments.  Fills bulk daily nourishment request for patient units.
• Performs duties of Dietary Aide - Tray Line as needed.
• Follows all cleaning and sanitation schedules and procedures at dishware washing area.
• Follows recycling procedure as specified.
