Property Executive Chef

Cragun's Resort on beautiful Gull Lake is looking for an Executive Chef to lead and pave way in our Culinary Department! The Executive Chef is responsible for development of menus, supervising and training staff, monitoring the food and labor budget and maintaining the highest level of food quality and sanitation standards.

Main Duties and Responsibilities:

• Develops menus, food purchase specifications and recipes
• Supervises, trains, and develops staff
• Assists in hiring, firing, performance evaluations and disciplining of staff
• Schedules and coordinates the work of chefs, cooks and other kitchen staff
• Approves the requisition of products and other necessary food supplies
• Ensures the high standards of sanitation, cleanliness and safety are retained
• Prepares necessary data for applicable parts of the budget, projects annual food, labor and other costs
• Attends food and beverage staff and management meetings
• Works closely with resort leadership in meeting standards and company objectives
• Cooks or directly supervises the cooking of items that require skillful preparation
• All other tasks and duties as assigned

Requirements

• 4-7 years of progressive culinary experience in high volume food production or catering preferred
• Requires the ability to multitask and hit deadlines
• Must be a team player and possess meaningful leadership qualities
• Ability to lead and motivate a team
• Holds high regard for professionalism in dealing with public and staff
• Ability to work a flexible schedule
