Food and beverage operations at Hayden Homes Amphitheater support hundreds of thousands of guests during live events each season. Our new pizza program is designed to deliver fast, consistent, delicious personal sized pizzas using a streamlined menu and efficient production flow. The Pizza Lead plays a critical role in shaping this program by establishing strong systems, culture, and standards from day one.

Job Overview
As a Pizza Lead, you are responsible for the overall execution of the pizza program during opening, service, and closing. This includes leading Pizza Line Cooks, overseeing pizza production, maintaining cleanliness and organization, and ensuring service standards are met during peak concert volume.

The Pizza Lead works directly on the line while simultaneously managing flow, anticipating needs, and making real time adjustments to keep service moving smoothly. Because this is a new concept, this role requires adaptability, problem solving, and a willingness to help refine systems, pacing, and execution as the program evolves.

Leads are responsible for training and coaching Pizza Line Cooks, reinforcing recipes and procedures, and holding the team accountable to food quality, safety, and cleanliness standards. The Pizza Lead serves as the primary point of communication between the pizza program and the Executive Chef / Assistant F&B Manager.

This position is ideal for an experienced pizza cook or kitchen lead who is excited to help build a new program, create a strong team culture, and deliver consistently great pizza at scale.

Responsibilities
• Lead and oversee high volume pizza service, ensuring speed, consistency, and food quality standards are met
• Actively cook pizzas and support production while supervising Pizza Line Cooks during service
• Help bring the pizza program vision to life by reinforcing systems, recipes, and service flow
• Set the tone for the team by fostering a positive, focused, hardworking, and fun kitchen environment
• Train new and returning staff on pizza stations, oven flow, recipes, portioning, and performance expectations
• Monitor product levels, anticipate demand, and adjust production to support peak volume while minimizing waste
• Retrieve product from cross venue storage areas, including freezers and refrigeration, ensuring the pizza station is fully stocked and ready for service before doors
• Organize and maintain pizza storage, prep, and service areas to support efficient production and food safety
• Complete par sheets accurately and consistently, and communicate low inventory or upcoming needs to the Executive Chef / Assistant F&B Manager to prevent 86’d items
• Lead opening and closing procedures, ensuring pizza ovens, prep areas, and equipment are properly set up, shut down, cleaned, and protected from weather
• Oversee cleaning initiatives including oven care, prep table sanitation, equipment cleaning, and full station reset at close
• Monitor pacing and staffing during service, adjusting roles and support to maintain smooth production flow
• Serve as the first point of contact for pizza equipment or operational issues during service, escalating as needed
• Provide real time coaching and feedback to Pizza Line Cooks to reinforce standards and support growth
• Champion the pizza program by taking pride in upholding high standards for food quality, cleanliness, equipment care, and teamwork
• Ensure productive use of labor by keeping staff actively engaged in cooking, prep, cleaning, dishwashing, and organization during both peak and slower periods
• Enforce food safety, sanitation, allergen awareness, and health department standards at all times
• Support sustainability and waste diversion efforts within a F&B program ranked #1 in the country for waste diversion
• Lead by example through professionalism, urgency, accountability, and attention to detail
• Follow all Hayden Homes Amphitheater kitchen and safety protocols

Required Qualifications
• Must be at least 18 years of age
• Food Handler’s Permit required
• Previous pizza cooking experience required, or high volume kitchen experience with strong transferable skills
• Prior lead, supervisor, or training experience strongly preferred
• Strong working knowledge of pizza ovens and high heat cooking environments
• Ability to lead and train a team in fast paced, high pressure service environments
• Clear communicator with a calm, supportive, solutions focused leadership style
