About the role:
Prepare all items for the dessert service for Michelin star, Auro, as well as Truss Restaurant + Bar. Gain experience plating fine dining desserts and mignardises. This position is for the PM service and must be in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment. Requires afternoon/late night availability.
What you will do:
Execute the mise-en-place and cooking of all dessert menu items as directed, ensuring the highest of standards are maintained for all outlets.
The ability to ensure superior production of all sweet items, pastries, cakes, ice creams, sorbets, breads, chocolates, etc. for all outlets as well as banquets and amenities.
The ability to communicate regularly with the Pastry Chef, and contribute to menu development and recipe creation for a variety of outlets.
Create and maintain a positive work environment conducive to learning and growth for all team members.
Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
Assist in prep work as required for the next shift
Who you bring:
High school education, cooking school or culinary institute education preferred
Minimum one year culinary or related work experience.
Pastry knowledge is expected for this position.
Working knowledge is generally attained on-the-job.
