Job Description

The Opportunity

The Cook Supervisor, under the direction of the Executive Chef, works as part of the KIPP Austin Public School Kitchen Team to prepare and serve breakfast, lunch and a snack for up to 5000 plus students and teachers. This position must have a firm understanding of HACCP principles, general nutrition and food preparation. This position will abide by the strictest standards of physical and food safety, freshness and sanitation. This individual will promote a teamwork environment that contributes to the successful operation of a professional kitchen.

Key Responsibilities

  • Abide by the strictest health and safety regulations
  • Keep all coolers and shelves clean, well-stocked and properly rotated using the FIFO method
  • Firm understanding and ability to convey the Temperature Danger Zone regulations
  • Follow established HACCP (Hazard Analysis Critical Control Points) food safety, cleaning and maintenance procedures. 
  • Maintain assigned workstation(s) in a safe and sanitary condition
  • Comply with all safety measures and regulations throughout the kitchen and report any injuries or unsafe conditions in the workplace to supervisor
  • Address and report safety violations and hazards immediately
  • Maintain orderly and clean work areas
  • Practice proper care and maintenance of all equipment
  • Carefully prepare products according to standardized recipes
  • Prep, prepare, and serve food in an attractive manner
  • Perform duties as required at special meal functions
  • Ability to read a thermometer and record temperatures daily
  • Knowledge of commercial kitchen and equipment
  • Ensure that standardized recipes are followed and all items are prepared and presented as outlined in recipe
  • Fundamental knowledge and understanding of food preparation, service, storage of food, sanitation and cleanliness
  • Ensure that Food Production Record keeping is completed accurately on a daily basis
  • Monitor all serving schedules and ensure that all food items are served according to menu specifications defined by departmental guidelines
  • Diligently work with his/her specific tasks and offer help to others when needed
  • Control and document product waste and spoilage
  • Understand the regulations and philosophies of the National School Lunch Program, School Breakfast Program and all other appropriate programs 
  • Maintain high productivity levels
  • Regular attendance is essential
  • Support all efforts to recycle and compost
  • Assist in any area of production or service as needed
  • Train, supervise and evaluate kitchen staff to perform duties as required by the KTX Child Nutrition Program
  • Communicate with Kitchen Team regarding all department operations
  • Guide completion of daily prep lists and job assignments

Qualifications

Skills and Qualifications

  • Fundamental knowledge and understanding of food preparation, service, storage, sanitation and cleanliness is necessary
  • City of Austin Food Handlers card is required
  • Basic computer skills required (this includes knowledge of Microsoft Word, Excel and Outlook)
  • Ability to communicate professionally, both written and verbally, with team and management
  • Ability to organize and prioritize
