- Maintains sanitation of all assigned areas in kitchen, cafeteria, storage and receiving, and all other related food service areas as assigned. Maintains continuous clean working area including floors, walls, shelving, coolers, and service/preparation stations. Conducts food preparation in an organized, safe and sanitary fashion, while adhering to safe food handling skills. Transports food to patient units, cafeteria, and other departments within the Medical Center. Stores and rotates food according to FIFO (first in, first out) as required. Washes and sanitizes pots, pans, and utensils according to State sanitation regulations. Cleans and sanitizes all work areas. Discards food waste in a safe and sanitary manner.
Responsible for storeroom activities of receiving, storing, maintaining inventory of, and distributing food products and supplies for the departments. Responsible for issuing and delivering of all food/supplies. Rotation of all inventory and follow all regulatory and departmental standards of storage.
- Essential Functions
- Cleans/sanitizes cooking/serving utensils, smallwares, and equipment as per regulatory standards. Utilizes drying racks properly.
- Cleans/sanitizes/maintains refrigerators, freezers, tables, kitchen equipment, dry storage, spice closet, cafeteria, and other departmental areas as per regulatory standards. Reports temperature/maintenance issues to Supervisor.
- Cleans/sanitizes all work areas, sinks, ovens, and racks. Sweeps and mops department areas.
- Accurately prepares nourishments and patient trays and delivers to specified nursing units in a timely manner. Transports food carts to Patient floors, Convent, Cafeteria, and other locations as specified.
- Places & rotates food in storage using established FIFO rotation procedures as instructed. Appropriately disposes of food waste after supervisor evaluation for re-use. Assists with maintenance of all Storage areas.
- Removes bags from trash containers and all other garbage/ recyclables and transports to compactor/dumpster. Maintains neatness w/ transporting trash from kitchen area to compactor/dumpster.
- Operates dishmachine and potwashing area according to established procedures. Uses appropriate temperatures and ppm for wash, rinse, and sanitizing, as instructed.
- Assists with maintenance of cafeteria, trayline, and production areas including, but not limited to, salad bar, coffee machines, restocking/replenishment, and sanitation.
- Assists production staff with basic prep work and cooking according to department and regulatory standards.
- Meets all required competencies for department, unit and/or hospital.
Reciever Responsibilities
- Receives/checks all incoming deliveries of food/supplies & addresses any corrections or production inquiries to Exec. Chef.
- Stores and rotates all food supplies according to FIFO procedures and other duties as per storeroom personnel.
- Accurately takes daily and monthly inventory of all supplies and maintains files/reports for Exec. Chef to review.
- Accurately issues and delivers food requisitions to kitchen, cafeteria, convent, and patient floors. Maintains files/reports for dept. management.
- Maintains storerooms, freezers, and refrigerators in an orderly, safe, and sanitary condition according to dept. and regulatory standards.
- Informs kitchen of items that need to be utilized to eliminate waste or expiration of products in the storeroom.
- Dispose of Food waste after supervisor evaluation for use/re-use.
- Responsible for maintaining all temperature logs as per dept. and regulatory standards.
- Work requires the ability to read and understand written instruction and no previous experience, High School diploma or equivalent preferred plus three months on the job training and orientation. Certification required as a Food Handler from the City of Paterson or similar food safety certification; must obtain within 1 week of hire and maintain certification. Work requires the ability to read and understand instructions, add and subtract numbers, and make comparisons between numbers and letters.
