Summary:
The Cook II/Head Cook is a food service support position in the food service department. The Cook II/ Head Cook prepares and cooks food for the detainee population and staff dining in support for the contract site. The Cook II/Head Cook ensures food production and other food service activities comply with ACA, PBNDS, OSHA and all applicable laws, regulations, and procedures are adhered to. The Cook II/ Head Cook is responsible for assisting the Food Service Administrator with contract deliverables and is responsible for deliverables when the Food Service Administrator is unavailable.
Please Note: This position is contingent upon contract award.
The pay rate for this position is $23.90/hour + $7.22/hour H&W.
Essential Duties and Responsibilities: (including but not limited to)
- Work with Food Service Worker staff and detainee workers ensuring adequate food is on hand for plating.
- Ensure daily food service production and sanitation sheets, including tray counts, temperature logs and other related reports are submitted accurately and in a timely manner.
- Ensure that ICE approved menus and diets are adhered to in accordance with ACA and PBNDS standards. Review menus to determine the type and quantity of food to be prepared.
- Ensure the preparation of special foods for prescribed medical or religious diets.
- Ensure food is cooked according to established recipes and/or preparation instructions. Ensure food production is completed in a timely manner.
- Ensure the baking, roasting, broiling, frying, and steaming of foods according to Ensure the carving and dividing of portions into individual servings.
- May modify the menu and submit the meal substitution request to the COR.
- Assist Food Service Worker staff during peak food production, or when short of staff.
- Ensure food temperatures are taken and recorded in accordance with the ACA and PBNDS standards.
- Test foods for completion of cooking time and adjust heat controls as needed. Test taste foods for quality assurance.
- Assist with the loading of food carts and ensuring meal tray counts are correct. Assist with the loading and unloading of food carts on the food service truck.
- Ensure the delivery of meal trays to detainee occupied areas in accordance with the established feeding schedule.
- Ensure the sanitation of the exterior and interior of the food service department is always maintained by following the established cleaning schedule.
- Assist with food service training for Food Service Worker staff and detainees. Ensure all training is documented and filed for quality assurance.
- Ensure Food Service Worker staff, and detainees are working in a safe environment by adhering with OSHA, BFDF, and Ahtna safety regulations.
- Actively promote a robust safety culture amongst co-workers. Report all accident/injury incidents to the Cook II / Head Cook.
- Report all damaged or unserviceable equipment to the Cook II / Head Cook. May submit maintenance work orders at the direction of the Food Service Administrator.
- Prepare and submit required food service reports accurately and in a timely manner.
- Perform other duties as assigned.
Minimum Qualifications:
- Must be at least 21 years of age
- High school diploma or equivalent (GED)
- One (1) years of previous experience in large quantity cooking in an institution, military, commercial kitchen, or similar setting.
- One (1) years of previous experience as a Cook I / Food Service Worker or equivalent in a detention facility, jail, or prison.
- Skilled in measuring and mixing ingredients according to recipes and calculating number of servings.
- Possess a valid Food Hander Certification.
- Possess a valid driver’s license.
- Knowledge and experience with PBNDS, ACA, PREA, OSHA and other federal regulations.
- US citizen or person lawfully admitted into the United States for permanent residence.
- Must have resided in the US for the last five (5) years (unless abroad on official US government duty).
- Must be able to obtain a favorable Suitability for Employment determination through ICE.
- Must have a Social Security card issued by the Social Security Administration.
Preferred Qualifications:
- Bilingual (Speak, read, and write in Spanish)
Supervision:
This position is required for supervising the Food Service Workers.
