About the role

Cherokee Casino Tahlequah is hiring a Food and Beverage Senior Manager to oversee the coordination, administration, and direction of all food and beverage activities for the property. Ensure all activities are in alignment with the standard principles (Big Six) and in full accordance with policies and procedures, gaming regulations, and alcoholic beverage control laws.   

  • Supervise/manage multiple departments through department managers.
  • Coordinates with others to maximize overall profitability of the property and attract new customers while retaining existing customers through superior customer service and hospitality, which builds brand loyalty.
  • Establishes and maintains performance and profit objectives for short and long-term goals for food and beverage.
  • Assists with the creation and evaluation of menu options for all food and beverage.
  • Responds to guest complaints/concerns/suggestions promptly.
  • Establishes appropriate staffing levels.
  • Proactively manages all aspects of financial measurement, including budget, food, and labor cost control, and inventory control.
  • Enforces all company policies and procedures as well as standards of quality and performance.                                               
  • Assists in the development of annual budgets and business plans.                                                                                                                                                                                                                                                                                                                                 
  • Coaches and develops others in performance management, fair treatment, customer service management, and assists in diagnosing and designing solutions to improve service quality.
  • Develops and oversees financial and business operating and capital expenditure plans that are consistent with the overall strategic positioning of the property.
  • Formally presents updates to plans and provides appropriate explanations and solutions to variances.
  • Stays current with industry trends, consumer preferences, and expectations, and competes for restaurant offerings in competitive markets.
  • Identifies compliance risks and works to eliminate or minimize risks.
  • Ensures compliance with federal, state, and local liquor regulations.
  • Ensures compliance with established food handling and sanitation requirements and standards.
  • Works with marketing to coordinate and plan food and beverage events and promotions.
  • Work may be performed in a variety of settings, including climate-controlled office settings and/or casino floors, which include exposure to second-hand smoke and crowd noise.
  • Bachelor’s Degree in hospitality, or other related field, or 10 years of food and beverage management experience or an equivalent combination of education and experience.
  • Ability to obtain Serv-Safe certification.
  • Ability to obtain a state-issued Alcoholic Beverage License.
  • Ability to obtain and maintain licensing by the appropriate gaming authority if/when needed.
  • Work will require working varied shifts, including weekends and holidays, as needed.
  • Work requires lifting objects up to 50 lbs.
