Food Sanitation Specialist Leader: Job Description
General Nature of Work:
Under direct supervision of Assistant Dining Facility Manager and Dining Facility Manager, FSSL directly supervises and coordinates work activities of Food Sanitation Specialist (FSS) employees in the dining facilities. This is a working supervisory position.
Duties and Responsibilities:
Responsible for maintaining good housekeeping practices for the dining facility.
Directs and assigns Food Sanitation Specialists in:
- Cleaning, sweeping, and mopping of floors, cleaning of woodwork, walls, windows, tables, counters kitchen and serving equipment.
- The washing of dishes, glasses, silverware, cooking vessels and utensils.
- Bussing services as required and ensuring condiments and napkins are refilled.
- Trash removal to disposal area and cleaning restrooms, entrance areas and back dock of dining facilities.
- Unloading subsistence and supply trucks, procuring storage from storeroom or refrigerators as requested.
- Monitor Pot & Pan water temperatures to ensure water is maintained at correct temperature.
- Ensure dishwasher is put together correctly, dispensing detergents, and maintaining the correct temperature.
- Assigns and monitor breaks for FSS.
Conduct Cook mounts and safety briefing before the start of each shift.
Counsel FSS as it is warranted, evaluate FSS to ensure they stay within job and training compliance.
Ensure 10 feet surrounding dumpster/dining facility at the start of each scheduled meal serving period is free of trash, cigarette butts, food waste, and any foreign matter.
Monitor and dispense cleaning chemicals.
Provide On the job training (OJT) to personnel / conduct monthly counseling on employees.
Order supplies as required to perform daily duties.
Assure mop and broom area equipment is stored properly.
Keep and document inventory on cleaning supplies daily.

Qualifications
Physical Requirements:
Lift and carry up to 50 pounds.
Stands and moves within the kitchen area for 6 to 7 hours (Excluding break and lunch periods)
Ability to bend and stoop for job duties.
Ability to climb ladders for cleaning kitchen hoods.
Qualifications:
High school diploma or GED
Excellent written and verbal communication skills.
One-year supervisory experience
