Executive Chef - Hackettstown Medical Center - Full time

Responsible for coordination of kitchen activities while maintaining a safe and sanitary work environment for the staff. Prepares or directs the preparation of meals in accordance with programs and guidelines. Oversees training of Chefs, Cooks, and other kitchen workers engaged in preparing food.


Principal Accountabilities:

1. Plans menus, analyzes recipes and makes decisions regarding the utilization of food surplus and leftovers, taking into account probable number of guests, marketing conditions, popularity of various dishes, and recency of menu etc. and staying within company guidelines. 
2. Provides training to the kitchen staff on food preparation, safe handling, operation of equipment, food safety and sanitation based on company and regulatory standards.
3. Estimates food consumption and maintains an inventory of food and non-food supplies to ensure that necessary products are available when needed.
4. Determines food, labor, and overhead costs, and assigns prices to menu items while directing the food apportionment policy to control costs. 
5. Oversees food preparation and supervises the kitchen personnel to ensure economical and timely food production. 
6. Takes personnel related decisions such as hiring and discharge of employees and maintains time and payroll records.
7. Establishes and enforces nutrition and sanitation standards for restaurant. 
8.May supervise or cooperate with steward/stewardess in matters pertaining to kitchen, pantry, and storeroom.
9. Performs other related duties as assigned.

Required:

Associates Culinary degree from a nationally accredited culinary school.  

ServSafe Managers Certificate, or equivalent. 

Preferred:
1. Certified Executive Chef preferred 

2. At least 5 years of restaurant experience preferred

3. At least 1 year experience as an Executive Chef preferred
