JOB PURPOSE: The Dining Manager oversees front-line staff and daily operations of three Pomona College Dining Halls (Frary, Frank, and Oldenborg) Coop Fountain and Sagehen Cafe. In collaboration with the Executive Chef and Sous Chef/Managers, this position ensures that the Dining venues are properly cleaned, stocked and staffed during each meal period. The Dining Manager is responsible for the direction and executive oversight of dining employees, , and all of the activities and services provided by them in Dining Services.
ESSENTIAL FUNCTIONS: Reporting directly to the General Manager Dining Services, the Dining Manager works independently and collaboratively to perform the following essential duties and responsibilities:
1. Collaborate with the General Manager, Executive Chef , Senior Dining Manager and Chef/Managers to oversee the daily operations of the Pomona College dining venues, to ensure that the Dining venues are properly cleaned, stocked and staffed during each meal period, and to ensure compliance with safe food handling practices and the highest level of food quality and customer service is provided for the Pomona College community.
2. Oversee the collection of cash and charge receipts by cashiers:
- Follow all College and Business Office procedures for counting cash drawers in and out and securing funds prior to opening, during meal periods and after closing.
- Oversee safe and secure handling of daily revenue and twice weekly transport to and from the Business Office as required.
3. Provide clear direction and oversight of all dining room activities in order to develop and achieve annual goals, including budgeting, planning and staff development. Responsible for monitoring and evaluating direct reports, and overall staff performance and daily assignments. Maintain an efficient, collegial, and proactive work environment within the dining room and collaborating departments.
- Supervise, evaluate and implement training for direct reports to ensure that they follow work rules and procedures at all times. This includes the delivery of hands-on or group training and orientation sessions to staff and personnel issues/processes, such as scheduling, work-related accidents/injuries, counseling, hiring/terminating, disciplinary actions, coaching and assigning duties.
- Implement and maintain a system to schedule staff to maintain dining hall service and production schedule while staying within budget. This includes managing staffing levels throughout each shift at all three dining halls.
4. Must be California ServSafe Food Protection Manager Certified, and successfully recertify every 5 years.
- Ensure compliance with all College policies and procedures and with all applicable local, state and federal laws, regulations, and public health standards.
- Conduct and/or assist the Operations Manager with periodic and regular inspections of assigned units to monitor the quality of:
i. safety, cleanliness, sanitation, and maintenance of equipment and service areas;
ii. employee appearance and cleanliness.
5. Organize and oversee the breakdown and cleanup following each meal period in the Dining venues.
6. Create work orders for required maintenance and repairs of Dining Halls and service areas.
7. Monitor inventory supply levels as needed to ensure that the Dining Halls are adequately stocked.
8. Provide excellent and professional customer service to students, faculty, staff, and external customers. Resolve problems and follow up with customers directly to ensure full customer satisfaction, without unnecessarily referring customers to other staff members.
9. Coordinates temporary staffing need within the dining halls including but not limited to employment agencies and social service employment staffing firms.
10. Write various reports as needed.
11. Assist dining staff during peak periods in dining production tasks and other cleaning assignments as needed.
12. Coordinate special projects/tasks/duties and provide assistance as assigned.
