Company Description
We are looking for a Director of Food & Beverage to join the re-opening of the famed Delano Miami Beach.
Set to open its doors in 2025, Delano Miami Beach will fuse historic charm with contemporary luxury, reflecting a reimagined experience that pays homage to the original visionary concept. Comprising 170 rooms and distinct food and beverage concepts, the hotel will preserve its iconic walk-in pool and, in addition, unveil a new pool on an amenity deck, offering breathtaking views of the ocean. Delano Miami Beach will act as the brand’s flagship location, re-establishing Delano as a trailblazer in luxury lifestyle hospitality. Ennismore, in partnership with Cain International (the owners of Delano Miami Beach as well as partner in the Delano brand), are currently undertaking a significant renovation and redevelopment of the iconic Delano hotel with an aim to open its doors again ahead of the 2025 winter high season.
The Director of Food & Beverage will be responsible for coordinating, supervising, and directing all property food and beverage operations while maintaining a profitable department and high-quality products and service levels. This role is expected to market ideas to promote business; reduce employee turnover; maintain revenue and payroll budgets; and meet budgeted productivity while keeping quality consistently high.
Job Description
What you'll do...
- Establish, monitor, and manage budgeted revenue and net operating income. Assures that the budgeting process is performed accurately and efficiently.
- Develop and implement action items and provide support and guidance in each restaurant/bar/outlet to achieve or exceed budgeted revenue and net operating income goals.
- Ensure that labor and expense guidelines are adhered to maintain budgeted expenses.
- Institute and monitor service and/or product upgrades to maintain the hotel’s competitive edge.
- Supervise and provide leadership to all Food and Beverage team members.
- Select, train and develop all personnel within the department. Able to exercise hire, discipline, personnel performance reviews and termination of employment discretion within Delano policies.
- Develop and enforce Delano specific policies and Standard Operating Procedures (SOP’s) like health and safety procedures, training programs, etc.
- Promote guest satisfaction throughout the operation and implement repeat guest recognition programs to build loyalty to the operation. Act as a liaison between the community and the Food and Beverage operation.
- Re-establish the Delano venues in an independent spirit locally in the community.
- Maintain a high-level path to achieving brand goals.
- Consult with all hotel departments and specifically the General Manager on a weekly basis to ensure smooth and successful operations.
- Monitor industry trends, take appropriate action to maintain competitive and profitable operations. Initiate menu planning and preparation with the Executive Chef as needed.
- Liaise with head office team on brand standards, growing brand trends, and concept direction. Work seamlessly with brand partners and corporate partnerships.
- Prepare and submit required reports in a timely manner.
- Organize and conduct department meetings on a regular basis.
- Participate in long-range planning. Lead, support and make recommendations for ongoing hotel programs with continuous improvement in networking.
- Ensure compliance with all local liquor laws, and health and sanitation regulations and all other Food and Beverage related life/safety and other legal compliance in accordance with federal and local laws.
- Ensure preparation of required reports, including (but not limited to) Wage Progress, payroll, revenue, team member schedules, quarterly actions plans.
- Oversee divisional matters as they relate to federal, state and local employment and civil rights laws.
Qualifications
What we're looking for...
- 8+ years of experience in a senior food & beverage role, preferably within a lifestyle brand
- Resort and international experience preferred.
- Proven track record of successful hotel and/or restaurant openings with sustained success well beyond the opening phase.
- You’re a strong team leader, a natural at managing and inspiring others in a way that gets the best out of them.
- You combine analytical and methodical thinking with high attention to detail and a solution-focused approach.
- Strong knowledge of health department rules and regulations, liquor laws and regulations
