POSITION TITLE:  Food Services Production Manager

DEPARTMENT/LOCATION:  Food Services/Food Production Center

STATUS:  Classified – Non-Exempt, Full Time

HOURS OF WORK/CALENDAR:  Monday through Friday, 175-day Calendar, 8 hours (5:30am-2:00pm)

POSITION SUMMARY:  

This position is responsible for providing support to the food service activities at assigned locations.  This position is expected to direct food service personnel; produce food to meet the mandated nutritional needs of students; ensure proper transport and availability of food service items to a variety of sites; provide written support to convey information; and comply with mandated health standards.  This position is part of the Food Services Team and reports to the Food Services Operation Supervisor.


PRIMARY DUTIES/RESPONSIBILITIES:

·         Clean and maintain utensils, equipment, and storage, food preparation and serving areas to maintain required sanitary conditions to comply with current health standards.  

·         Coordinate food service schedules to provide coverage for special events (catering, promotional events, etc.).

·         Estimate food preparation amounts and adjust recipes to meet projected meal requirements and minimize waste of food items.

·         Evaluate prepared food for flavor, appearance, and temperature to present items that will be accepted by students and/or staff.

·         Inspect food and supply deliveries to verify quantity, quality, and specifications of order comply with mandated health requirements.  

·         Inventory food, condiments, supplies and equipment at specified intervals to ensure availability of items required for meeting projected menu requirements. 

·         Manage site operations to provide safe and efficient food services at assigned site comply with mandated nutritional requirements and health standards.

·         Monitor kitchen and cafeteria areas to ensure safe and sanitary working environment. 

·         Participate in unit meetings, in-service training, workshops, etc. to convey and/or gather information required to perform job functions.

·         Perform functions of other nutritional services positions, as needed to ensure adequate staff coverage within site nutritional services operations.

·         Prepare documents (transportation logs, meal counts by site, reconciliation reports, time sheets, etc.) to provide written support and/or convey information.

·         Supervise food service workers and other personnel as assigned (orient, train, evaluate, etc.) to maximize productivity of the work force, provide adequate coverage and ensure compliance with health, safety, and nutritional standards of central kitchen operations.

·         Train assigned staff (food preparation, health standards, sanitation, methods, etc.) to address nutritional service requirements in compliance with established guidelines.

·         Other duties as assigned.


Education and Experience Requirements:

·         High school diploma or equivalent

·         Job related experience with increasing levels of responsibility is required


Required Knowledge, Skills and Abilities:

·         Excellent verbal, written and listening communication skills with attention to detail

·         Ability to organize and prioritize multiple projects simultaneously

·         Ability to work in a fast-paced work environment with interruptions

·         Ability to perform basic math, including calculations using fractions, percent's and/or ratios 

·         Demonstrated ability in compiling, organizing, and analyzing data

·         Ability to schedule activities, meetings, and/or events

·         Ability to operate equipment found in a commercial kitchen

·         Knowledge of safety practices and procedures; quantify food preparation and handling; and sanitation practices 

·         Proficiency with Microsoft Office (Word, Outlook, etc.)

·         High degree of motivation, responsibility and confidentiality

·         Ability to work with a wide diversity of individuals

·         Ability to self-initiate areas of opportunity, make recommendations for improvement, and follow up as necessary to achieve desired results

PHYSICAL REQUIREMENTS: 

 This position requires the performance of light work. Exerting up to 20 pounds of force occasionally, and/or up to 10 pounds of force frequently, and/or negligible amount of force constantly to move objects.
