Position: Kitchen Manager Apprentice (18 Month)
Pay-Rate: 18.05/per hour
Job Summary:
The CRF Kitchen Manager Apprenticeship Program within the Broadmoor Hotel is dedicated to the development and mentorship of passionate and engaged culinary professionals throughout the industry. Our goal is to give the next generation of our industry the real world, practical knowledge and experience that they need to become leaders in the industry and practitioners of the craft of professional cooking.

As a member of the Culinary Team this position will be responsible for learning, preparing, and presenting all area specific menu items and will assist our Chef de Cuisine’s in daily responsibilities. This program is an entry level 18-month program designed to train individuals to become culinary professionals and provide them with a fundamental culinary knowledge. Qualified candidates for enrollment will have a minimum of a High School Diploma or a GED with preferred 2 years of entry level culinarian experience. Successful apprentices will excel in classical cooking fundamentals and graduate from the program as a leading culinarian. Our goal is to graduate apprentices into a Lead Cook 1 role at The Broadmoor.

Notes: This program begins on September 1st of each year. Application will be accepted throughout the year. Qualified individuals will be eligible to begin working prior to the September 1st start date.
Essential Duties and Responsibilities include the following while other duties may be assigned:
• Attend Broadmoor Skills Courses
• Attend semi frequent Field Trips
• Participates in assigned kitchen rotations which will occur every 3 months to allow the individual to experience a variety of culinary areas within the hotel.
• Will complete 2,000 hours worked with 18 months
• Will complete Manage First Hospitality Accounting, Purchasing, and Human Resource Management & Supervision courses.
• Will complete SERV Safe Manager Certification
• Trains to assist with maintaining the Broadmoor Farm.
• Trains to assist with the operation of various stations during a la carte service.
• Trains to assist with preparing and executing banquet events.
• Trains to assist in preparation of all menu items in assigned area daily.
• Trains to assist with organization of product, equipment, and necessary paperwork.
• Trains to assist precisely follow portion control, presentation of food, consistency of food, and flavor as determined by the culinary department.
• Trains to check coolers for proper rotation of food items to prevent spoilage.
• Must be able to maintain Serv Safe and health department standards.
• Trains to check and complete mise en place and pars to set-up the station.
• Highly responsible & reliable
• Ability to work well under pressure in a fast-paced environment.
• Ability to work cohesively as part of a team.
• Ability to focus attention on guest needs, always remaining calm and courteous.
• Uphold and abide by all Broadmoor policies, procedures, and safety guidelines.
• Takes required breaks, notifying supervisor prior to leaving station.
• Other duties as assigned.

What we are looking for:
• Must have a High School Diploma or G.E.D and preferred 2 years of applicable culinary experience.
• Must be 18 years old.
• The employee is occasionally required to lift/pull/push up to 50 pounds and will be working in conditions that are both inside and outside at times.
