THE JOB:

The Senior Manager Executive Chef is responsible for overseeing all aspects of kitchen operations, providing strong leadership to Sous Chefs, Assistant Chefs, and the culinary team in alignment with the MGM brand and the traditions of authentic Indian cuisine. This role ensures the consistent delivery of high-quality, refined Indian dishes that meet the expectations of a luxury dining experience. The Senior Manager Executive Chef drives both operational and financial performance, manages recipes, inventory, and supplies, and maintains effective cost controls. They are also responsible for staff training, scheduling, and performance, executing property wide F&B initiatives, and ensuring the kitchen meets all MGM Resorts service and cleanliness standards while creating exceptional guest experiences.

THE DAY-TO-DAY:

  • Oversees daily commissary kitchen operations, including budgeting, labor, scheduling, inventory, and service standards. Leads execution of company-wide initiatives and represents the kitchen in divisional and corporate meetings.

  • Partners with Gymkhana's Corporate Team to develop fine-dining menus rooted in traditional Indian cuisine, incorporating cultural events, regional festivals, seasonal ingredients, and guest preferences.

  • Directs the Tandoor and Indian Cuisine Program, ensuring authenticity across dishes like kebabs, curries, biryani, and breads. Trains staff in traditional spice blending, cooking techniques, and tandoor operations.

  • Leads compliance with health, sanitation, and training standards. Manages HR functions, fosters a collaborative team culture, and supports hiring, coaching, and succession planning in line with company values.

  • Works closely with service and beverage teams to deliver a cohesive guest experience. Reviews event orders daily, responds to guest feedback, and ensures product quality and consistency across all kitchen operations.

THE IDEAL CANDIDATE:

  • Bachelor's Degree

  • 4+ years of prior relevant experience with hands-on expertise in authentic Indian cuisine, including strong knowledge of regional traditions, techniques, and culinary authenticity.

  • Prior Experience as Executive Chef in a premium, high-end fine dining Indian restaurant

  • Certification, Diploma, or Degree with an Indian Culinary Institute, focus on Applied & Theoretical culinary training in regional Indian cuisines and professional kitchen operations.
