Abby’s Catering has been providing one-of-a-kind culinary and hospitality experience since opening in 1980. Our customers are high profile passengers visiting or residing in Houston and Dallas. Celebrities, government officials, head of states, secretaries, industry leaders, all traveling out of Houston and Dallas aboard private, corporate, and commercial aircrafts are part of Abby’s valued circle of customers. Abby’s also provides exclusive gourmet delights for corporate offices, private and corporate events as well as food service management contracts in the Houston and Dallas metro areas.

Our Executive Chef leads the Commercial Airline Catering division of the company. He/She ensures that Abby’s food creations are a ‘passport’ to a culinary journey of cultural and diverse preferences. Highest customer satisfaction is the signature of Abby’s Catering. Our culinary team will make sure our customers enjoy an unforgettable dining experience. 

Reports to: Corporate Executive Chef

To him/her report: Sous Chef, Line cooks, Prep-Cooks, Helpers


Essential functions:

  • Production: Manage high volume (7000+) meal preparation per week
  • Train culinary personnel on recipes
  • Always dish out and assemble our food product 100% to the customer specifications.
  • Daily on time delivery of flights based on Kitchen Ready Times.Quality assurance for assigned areas:
  • Guarantee hygiene and food safety guidelines are always followed by all staff within assigned areas and all storage areas are spotless.

Financials for assigned areas:

  • Meet food and labor cost targets as per directive by Senior Management or Budget.
  • Minimize and control overproduction / overprovisioning and wastage.
  • Maintain working equipment in best conditions, keep operational variables and kitchen supplies at a minimum level

Management of assigned area:

  • Leadership, Management and Accountability!
  • Create and maintain winning teams, keep turnover at a minimum.
  • Train and develop the Team skills, identify talent, and promote from within.
  • Excelling in teamwork when interacting with other departments and/or Senior Management

Requirements

Requirements, but not limited to: This position requires flexible work schedules within a 24/7 work environment. The airline catering industry is a seasonal business and certain peak times of the year are black out periods for PTO (paid time off), e.g. year end, summer. This position requires experience in Leadership, Management, demanding Accountability and a high degree of Training and Teaching abilities, to lead the entire team to success ( highest product quality, highest productivity output, complying with all food safety rules and regulations).

Qualifications:

  •  Three 3+ years hands on experience as an Executive Chef within a high volume and complex operation of a similar size.
  •  Experienced in management of production sequences, Six Sigma Certification is a big plus
  •  Complete knowledge of HACCP and food safety programs and food industry standards.
  •  Knowledge in controlling food & labor costs, planning based on volume forecasts
  •   Must possess strong culinary skills in both hot and cold preparations.
  •  Must possess a Food Protection Manager Certification and registration with the City of Houston.
  •  Ability to cultivate working relationships with customers.
  •  Proficient in IT use, e.g. Microsoft Office: Word, Excel, etc.
  •  Availability to handle numerous tasks simultaneously and able to work well under pressure in a fast-paced environment.
  •  Ability to be an effective communicator in a multi-cultural workforce.
  •  Can easily adapt to change.
