Preparing sweet items, pastries, cakes, cookies, muffins, fruit compotes, guest orders and banquet event orders in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment. This role is part of the Food & Beverage Division, reporting to the Pastry Management Team. Candidates must have valid authorization to work in the United States at the time of application.
What You Will Do
• Prepare pastry items of consistent quality following recipe cards, as well as production, portion, and presentation standards.
• Operate, maintain and properly clean kitchen equipment, including deck oven, rotating oven, gas stove, Hobart mixers, dough sheeter, bun divider, proofer, steamer, food processor, slicer.
• Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables.
What You Will Bring
• Culinary education or equivalent experience.
• Ability to operate, maintain and properly clean all equipment and utensils.
• Basic mathematics essential.
• Hawaii Food Handler’s Card
• Tuberculosis Clearance
• ServSafe (within 3 months)
