To manage the pastry hub in Germany (Berlin, Hamburg, and Munich), we are looking for a passionate Head Pastry Chef: you report to the Executive Chef in Germany and functionally to the Group Executive Pastry Chef.

Main mission: Ensure the quality of pastry production and the development of pastry chefs.
You will have regular management rituals and oversee the functional management of the pastry leaders in the restaurants. As an ambassador of Big Mamma, you embody our values of excellence, meritocracy, entrepreneurship, and authenticity in the daily operations of the restaurant.


Quality & R&D
Objective: Deliver the Big Mamma experience to customers through our desserts.

- Follow the validated process for the offer with the workshops.
- Conduct training in restaurants when the menu changes.
- Oversee dessert division (Executive Pastry Chef/Executive Chef/F&B Manager).
- Manage scheduling (restaurant visits/quality control).
- Ensure recipe sheets/offers are up-to-date and confirm product validation reports between the Executive Pastry Chef and buyers (Group product validation with the Group Executive Chef).
- R&D decisions must be communicated to the Executive Chef in Germany.


HR & Mapping
Objective: 0% turnover.

- Support pastry chefs with management through roadmaps.
- Assist in recruiting pastry profiles.
- Update and validate pastry team mapping 2x per month.
- Strengthen the management skills of pastry leaders and develop future talent for new
openings.
- Collaborate on menu changes.
- Be a key player in building a strong and ambitious kitchen team
