JOB DESCRIPTION

Responsibilities

The Fresh Harvest Buffet Sous Chef is responsible for consistently providing our Guests with an experience expected of a high-end, multi-dimensional buffet restaurant. Food quality is at the highest level for a buffet e.g. seven action stations where many of the items are prepared to order for our guests. In addition, this position will assist the Executive Chef and the Fresh Harvest Buffet Chef with recipes, staff, menus, preparation and presentation, as well as supervising the daily operations of the kitchen.

 

Essential duties include, but are not limited to:

  • Responsible for scheduling employees.
  • Directly communicates with all supervisors, chefs and line employees on a daily basis regarding needs, requirements and expectations.
  • Instructs employees on daily responsibilities, following their progress in completing tasks time-frame allotted to ensure proper production. Counsels, guides, trains, and instructs assigned personnel in the proper performance of their duties.
  • Controls production levels in order to minimize waste and advises Chef of progress. Institutes cost control procedures and standards of operations and performance.
  • Implements operations, standards and procedures established by Chef including sanitation, tasting of products and presentation.
  • Ensures all food is prepared in accordance with operation standards.
  • Interacts with guest as much as possible to create a memorable experience.
  • Assists other line employees with daily responsibilities.
  • Strives to eliminate over-production and over-purchasing.
  • Ensures all food items are produced in accordance with established standards in respect to preparation, storage and accountability.
  • Ensures that production and storage areas are maintained in accordance with city and state health department codes and that health and sanitation standards are met.
  • Promotes positive public/employee relations at all times.
  • Maintains a clean, safe, hazard-free work environment within area responsibility.
  • Provides project leadership and project management as assigned.
  • Other duties as assigned.

Qualifications

  • Minimum of two (2) to four (4) years of supervisory experience in a high volume kitchen required.
  • Two (2) year culinary arts degree preferred or the combination of education and experience.

Work Environment:

  • Duties and responsibilities are typically performed in a fast-paced kitchen environment, as well as the back of house of the casino, which can be faced-paced with excessive noise. Also, there may be times where you will need to be on the Casino Floor or pass through this area. On the C
